Soup: Montel's Cream of Potato Soup

1. Place the oil in the inner pot and set the cooker on brown mode
- 10 medium Yukon Gold potatoes
- 8 cloves of garlic, peeled and minced
- 1 onion, peeled and diced
- 5 cups chicken stock
- 1 sprig rosemary
- 1 cup light cream
- sea salt & black pepper to taste

- 1 teaspoon cornstarch
- 1/4 cup cold water
- 1/2 cup apricot preserves
- 2 tablespoons soy sauce
- 1/2 teaspoon minced garlic
- 1/4 teaspoon salt
- 1/4 teaspoon crushed red pepper flakes
- 1 pound beef top sirloin steak, thinly sliced

- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 pound ground beef (cooked)

Neely's Fried Zucchini

Preheat oil in a deep-fryer to 350 degrees F
- Spicy Dipping Sauce:
- • Peanut oil, for frying
- • 3 large zucchini, cut into 1/2-inch rounds
- • 1/2 cup all-purpose flour
- • 1 1/2 cups panko bread crumbs
- • 1/4 cup finely grated Parmesan
- • 2 tablespoons finely chopped fresh parsley leaves
- • 1/2 teaspoon red pepper flakes
- • Salt and freshly ground black pepper

- • 1/4 cup water
- • Ranch dressing, for dipping

- 2 ears fresh corn (2 cups kernels) or 1 can drained sweet corn
- 1/2 cup flour
- 1/3 cup cornmeal

- 1 small bunch Italian parsley
- 1 Cubano chile pepper, chopped
- Salt and freshly ground pepper

- 1 recipe Spaghetti, recipe follows
- 1/4 cup chopped fresh basil
- 1/2 pound ground pork
- 1/2 pound ground veal
- 1/2 pound ground beef
- 2 large eggs, lightly beaten
- 1/3 cup grated Parmesan
- 4 cloves garlic, finely chopped and sauteed
- 1/4 cup dry bread crumbs
- 1/4 cup finely chopped Italian parsley leaves
