Cornbread Dressing

Preheat oven to 350 degrees F and lightly grease an 8 inch baking dish
- Mama's Cornbread:
- 4 cups Mama's Cornbread, recipe follows
- 2 cups 1-inch cubes toasted bread
- 10 saltine crackers, crumbled
- 2 cups vegetable stock
- 3 celery stalks, diced
- 1 medium onion, diced
- 2 large eggs
- 2 ounces (1/2 stick) butter
- 1 teaspoon dried sage
- Salt and freshly ground black pepper
- 1 1/2 cups cornmeal
- 1/2 cup flour
- 1 cup buttermilk
- 2 large eggs
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 6 tablespoons vegetable oil
- Preheat the oven to 375 degrees F.
Grandmother's Chocolate Muffins

Preheat oven to 375 degrees
- 2 cups sugar
- 1 cup shortening or oil
- 3 eggs
- 2 teaspoon vanilla
- 3 cups flour
- 1 tablespoon baking powder
- 1 cup milk
- 1/4 cup cocoa (optional)
Homemade Donuts

Roll out dough. Cut into circles using cookie cutter or other small round tool
- Biscuit dough, ready to use
- 1/4 cup - 1/2 cup vegetable oil or canola oil

Rachael's Frozen Peach Champagne Cocktails

Place a shallow bowl of water along side a shallow bowl with 1/4 cup sugar in it
- 1/4 cup sugar, to rim glasses
- 1 pint peach sorbet
- 2 shots Triple Sec, Grand Marnier or Cointreau
- Chilled champagne or sparkling wine, to fill blender, 1/3 bottle
- Raspberries and 4 springs mint, optional garnish

Heat grill to high. Brush chicken and onions on both sides with oil and season with salt and pepper
- 3 (8-ounce) boneless skinless, chicken breasts
- 2 red onions, peeled and cut into 1/4-inch thick rings
- Olive oil
- Salt and freshly ground black pepper
- 3 carrots, peeled and shredded
- 1/4 cup chopped fresh parsley leaves
- 1/4 cup thinly sliced scallions
- 2 cups good quality mayonnaise
- 1/4 cup low-sodium chicken broth
- 2 tablespoons white wine vinegar
- 3 cloves garlic, chopped
- 2 tablespoons Spanish paprika

- 1 cup whole-wheat flour
- 1/2 cup chestnut flour
- 1/3 cup olive oil
