Homemade Chili

Put the chopped green peppers, chopped celery and butter in a large skillet over medium heat
- 3 to 4 large fresh green bell peppers, seeded and chopped
- 1 1/2 large ribs fresh celery, chopped
- 1/4 pound butter
- 5 pounds fresh choice ground beef
- 2 pounds fresh sweet yellow onions, chopped (3 to 4), plus more for serving
- 3 TBSP salt, plus more for seasoning
- 3 TBSP ground black pepper, plus more for seasoning
- 6 TBSP chili powder
- 2 Qts premium diced tomatoes in juice
- 2 Qts chili sauce
- 2 Qts pinto beans with juice
- Freshly grated Cheddar
- Hot pepper sauce of choice
Peach-Mustard BBQ Sauce

Melt the butter in a saucepan over medium heat
- 3 tablespoons unsalted butter
- 2 tablespoons minced onion
- 2 cloves garlic, minced
- 3 tablespoons cider vinegar
- 1/2 cup whole-grain mustard
- 1/4 cup Dijon mustard
- 3/4 cup peach jam or preserves
- 1 tablespoon bourbon
- 1/2 teaspoon kosher salt
Paula's Toffee Brownies

Prepare the brownie mix according to package directions
- 1 (17.6-ounce) package brownie mix with walnuts
- Vegetable oil cooking spray
- 3 (6-ounce) candy bars with almonds and toffee chips (recommended: Symphony brand)
Steamer: Steamed Asparagus with Citrus Vinaigrette

Fill water tank with water
- 1 pound asparagus spears, trimmed
- 1 teaspoon fresh orange zest
- 1 tablespoon fresh orange juice
- 2 tablespoons Dijon mustard
- 1 tablespoon olive oil
- 1 tablespoon fresh lemon juice
- Kosher salt to taste
- Fresh pepper to taste
Comfort Food Diet Swiss Steak

In a large nonstick skillet, brown cubed steaks on both sides in oil over medium-high heat; remove and set aside
- 4 beef cubed steaks (4 ounces each)
- 1 tablespoon canola oil
- 1 medium onion, chopped
- 1 celery rib with leaves, chopped
- 1 garlic clove, minced
- 1 can (14-1/2 ounces) Hunt’s® Stewed Tomatoes, cut up
- 1 can (8 ounces) Hunt’s® Tomato Sauce
- 1 teaspoon beef bouillon granules
- 1 tablespoon cornstarch
- 2 tablespoons cold water

- 1 tablespoon unbleached all-purpose flour
- 1/2 cup low-fat (1%) milk
- 1/2 teaspoon grated lemon zest
- 1 tablespoon fresh lemon juice
- 1/8 teaspoon ground black pepper
- 2 tablespoons olive oil
- 1 ounce slice low-sodium ham, cut into 4 pieces
- 1 bag (6 ounces) baby spinach
- 4 large eggs
- 2 light multigrain English muffins, split and toasted
