Giada's Frittata with Peaches and Cherries

Place an oven rack in the center of the oven
- 8 ounces frozen peaches, thawed and drained
- 8 ounces frozen cherries, thawed and drained
- 6 eggs, at room temperature
- 1/4 cup whole milk
- 1/3 cup sugar
- 1 tablespoon chopped fresh thyme leaves
- 1/2 teaspoon kosher salt
- 1 tablespoon vegetable or canola oil
- 1/3 cup (3 ounces) crumbled goat cheese
- Maple syrup, for serving
Bread: Zucchini Bread

1. Preheat oven to 350°F
- 1 egg
- 2 egg whites
- 1/2 cup applesauce
- 1/2 cup vegetable oil
- 1 cup sugar
- 2 teaspoons vanilla extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 2 teaspoons ground cinnamon
- 1 teaspoon salt
- 2 cups shredded zucchini
- 1 cup raisins
Glazed Doughnut Muffins

- For the Glaze:

- 1/4 cup butter
- 1/4 cup vegetable oil
- 1/2 cup granulated sugar
- 1/3 cup brown sugar
- 2 large eggs
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 3/4 teaspoon ground nutmeg
- 1 teaspoon cinnamon
- 3/4 teaspoon salt
- 1 teaspoon vanilla extract
- 2 2/3 cups all-purpose flour
- 1 cup milk
- 3 tablespoons butter; melted
- 1 cup confectioners’ sugar; sifted
- 3/4 teaspoon vanilla
- 2 tablespoons hot water
Marcela's Churro Bites

For the churro dough: Heat 2 inches oil to 350 degrees F in a wide 3 1/2 to 4-quart heavy pot over high heat
- Churro Dough:
- Vegetable oil, for frying
- 1 cinnamon stick
- 4 tablespoons (1/2 stick) unsalted butter, cut into cubes
- 1 teaspoon sugar
- 1/2 teaspoon kosher salt
- 1 cup flour
- 4 eggs
- Cinnamon-Sugar:
- 2 cups granulated sugar
- 1 tablespoon ground cinnamon
- Mexican Chocolate Sauce:
- 1/2 cup heavy whipping cream
- 2 (3.2-ounce) disks Mexican chocolate, chopped
Muffins: Apple Cinnamon Muffins with Caramel Centers

Preheat oven to 375°F. Grease the 12-cup Surprise-filled Cupcake Pan or line with paper muffin liners
- 3 cups all-purpose flour
- 1-1/2 cups white sugar
- 1 tsp. salt
- 4 tsp. baking powder
- 2 tsp. ground cinnamon
- 2/3 cups vegetable oil
- 2 eggs
- 2/3 cups milk
- 3 apples — peeled, cored, and grated
- 1/2 cup white sugar
- 2/3 cups all-purpose flour
- 1/2 cup butter, cubed
- 1-1/2 tsp. ground cinnamon
- 1 bag caramel candy squares (Kraft or similar)
Paula's Crunch Onion Rings

In a deep-fryer or Dutch oven, heat 4 inches of peanut oil to 360 degrees F
- Peanut oil, for frying
- 1 cup whole buttermilk
- 1 large egg
- 1 sleeve soda crackers, crushed (recommended: Saltine)
- 1 cup all-purpose flour
- 1 teaspoon salt
- 1 teaspoon ground black chipotle chili pepper
- 2 large onions, cut into 1/4-inch thick slices and separated into rings
- Chipotle Cream Dipping Sauce: (May/June 06, pg. 72)
- 1 (8-ounce) container sour cream
- 1/2 chipotle pepper in adobo sauce, minced
- 1/2 teaspoon adobo sauce from can
- 1 tablespoon heavy whipping cream
- 2 teaspoons fresh lime juice
- 1/2 teaspoons chili powder
- 1/4 teaspoon salt
- In a small bowl, combine all the ingredients; cover and refrigerate until using.

Vitamix: Strawberry Ice Cream

1. Place all ingredients into the Vitamix container in the order listed and secure lid
- 1 cup (240 ml) half and half or whole milk
- 1 pound (454 g) frozen unsweetened strawberries
- 1/3-1/2 cup (66-100 g) sugar or other sweetener to taste
- 1/2 teaspoon vanilla extract
Mediterranean Chicken Stew

- 1 ⁄2 cup flour
- 1 tsp salt, divided
- 1 ⁄2 tsp black pepper, divided
- 1 (3-lb) chicken, cut into pieces
- 2 Tbsp olive oil
- 1 chopped onion
- 2 tsp chopped garlic
- 1 (14-oz) can diced tomatoes
- 2 small cans mushrooms, drained
- 1 tsp dried oregano

- 2 onions, peeled and quartered
- 1 whole pork butt (pork shoulder roast)
- Salt and freshly ground black pepper
- One 11-ounce can chipotle peppers in adobo sauce
- 2 cans pop (I use Dr Pepper)
- 4 packed tablespoons brown sugar
Guilt Free Spaghetti with Italian Meatballs

1. In a large saucepan coated with cooking spray, cook onion and garlic in oil until tender

- 3/4 cup chopped onion
- 1 garlic clove, minced
- 1 tablespoon olive oil
- 1 can (28 oz.) Italian crushed tomatoes, undrained
- 1 can (6 oz.) tomato paste
- 1 cup water
- 1 1/2 teaspoons dried oregano

- 4 slices white bread, torn
- 1/2 cup water
- 2 eggs, lightly beaten
