Healthy: Cheesy Chicken Pasta

1.Bring a large pot of water to a boil
- 1.8 ounces whole-wheat penne
- 2.2 cups 1/2-inch cauliflower florets
- 3.1 tablespoon extra-virgin olive oil
- 4.1 /2 cup finely chopped onion
- 5.1 /2 cup dry white wine
- 6.3 cups low-fat milk
- 7.3 tablespoons all-purpose flour
- 8.3 /4 teaspoon salt
- 9.1 /2 teaspoon freshly ground pepper
- 10.1 cup shredded Gruyère or Swiss cheese
- 11.3 cups shredded cooked chicken or turkey (12 ounces; see Tip)
- 12.1 teaspoon Dijon mustard
- 13.2 tablespoons chopped fresh chives or scallion greens
Marlene's Hot Apple Stir-Fry

1. Melt the butter in a medium saucepan over medium-high heat
- 1 tablespoon butter
- 3 medium apples, peeled and sliced
- 3/4 teaspoon ground cinnamon
- 1/2 cup sugar-free maple flavored syrup
- 1/4 cup water

Marlene's Country Cornbread Muffins

1. Preheat the oven to 375 degrees
- 1 large egg
- 2 large egg whits
- 3 tablespoons butter, melted
- 1 1/4 cups buttermilk
- 1 teaspoon vanilla extract
- 1 cup cornmeal
- 1/2 cup white whole wheat flour
- 1/2 cup all-purpose flour
- 1/2 cup Splenda
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- Pinch of salt
Bread Pudding with Southern Bourbon Sauce

Preheat oven to 350 degrees F
- 3 cups stale French bread, cut in 3/4-inch cubes
- 2 cups milk
- 2 eggs
- 1 cup sugar
- 1 tablespoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 4 tablespoons butter, melted and slightly cooled
- 1/2 cup sultana raisins
- Bourbon Sauce
- egg yolks
- 1 stick butter, not margarine
- 1 cup sugar
- 1/3 cup bourbon whiskey, to taste
2013: Cake Mix Pumpkin Muffins or Bread

I’ve seen several varieties of different recipes and modified them all
- For variety these are some optional ingredients that can be added:
- 1 boxed cake mix (white or yellow) – I used a butter mixed yellow
- 1 15oz can of pumpkin (not pie filling)
- nuts, raisins, or cranberries
- Pumpkin spice, clover, and nutmeg
- Chocolate Chips
- Sour Cream
Beef: Debra's Beer Braised Baby Back Ribs

- 1 slap baby back ribs -- cut in 4 pieces
- 1 teaspoon seasoning salt *
- 1 tablespoon olive oil -- optional
- 12 ounces beer
- 1 cup stock
- 1 1/2 cups barbecue sauce

In a medium-sized, microwave-safe bowl, melt chocolate and margarine for 15 seconds at a time until melted
- Brownies:
- 6 oz. milk chocolate
- 5 Tbsp. margarine
- 5 Tbsp. sugar
- 3 eggs, slightly beaten
- 1-1/2 tsp. vanilla
- 3/4 cup flour
- 1/4 cup cocoa powder
- 1/2 cup chopped almonds
- 1/4 cup white chocolate chips
- 1/4 cup chocolate chips
- 1/4 cup crushed chocolate-covered pretzels
- Whipped cream or ice cream, to garnish
- Chocolate sauce, to garnish
- Cream Cheese Swirl:
- 2 oz. cream cheese at room temperature
- 2 Tbsp. sugar
- 1 egg yolk

- ■1/4 C. vital wheat gluten
- ■1 tsp. baking powder
- ■1/2 tsp. salt
- ■1 (2.5-oz) jar Gerber Banana Baby Food
- ■1/2 C. sour cream
- ■1 tsp. banana flavor extract
Comfort Food Diet Apple Meat Loaf

1. In a small skillet, saute onion in butter until tender
- 1 small onion, finely chopped
- 2 teaspoons butter
- 3/4 cup shredded peeled apple
- 1/2 cup soft bread crumbs
- 1 egg
- 4 teaspoons ketchup
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Dash ground allspice
- 3/4 pound lean ground beef
- In a small skillet, saute onion in butter until tender.
- In a large bowl, combine the apple, bread crumbs, egg, ketchup, mustard, salt, pepper and allspice. Stir in onion. Crumble beef over mixture and mix well. Shape into a 6-in. x 5-in. loaf.
- Place in an 8-in. square baking dish coated with cooking spray. Bake, uncovered, at 350° for 40-45 minutes or until no pink remains and a meat thermometer reads 160°. Yield: 3 servings.
