Chew: Mario Batali's Fusilli with Sausage

- /2 cup Extra Virgin Olive Oil
- 1 Medium Red Onion (Chopped into 1/2" dice)
- 1 pound Italian Sausage with fennel seeds (casings removed and meat crumbled)
- 1 1/2 cups Basic Tomato Sauce
- 1 Bunch (8 ounce) Dinosaur Kale (sliced into 1/4" wide ribbons)
- 2 tablespoons Salt
- 1 1/2 pounds Fusilli Corti
- 1/2 cup Freshly Grated Parmigiano-Reggiano
- 2 cloves garlic (sliced)
- 1 sprig fresh rosemary (leaves only)
Carla Hall's Blueberry Pancakes

For the Pancakes: Combine the flour, baking powder, sugar, and cinnamon in a large bowl
- For the Pancakes:
- 3/4 cup Flour
- 1 tablespoon Baking Powder
- 1/2 cup Sugar
- 1/2 teaspoon Ground Cinnamon
- 1 Egg (lightly beaten)
- 1 1/4 cup Buttermilk
- Zest of 1 Lemon
- 4 tablespoons Butter (melted and cooled slightly)
- 1 pint Blueberries
- For the Syrup:
- 1/2 cup Maple Syrup
- 1/4 cup Blueberry Jam
Cupcakes: Apple Cupcakes

Cupcakes: Preheat oven to 350 degrees F
- For the cake:
- 1 cup (2 sticks) unsalted butter, at room temperature
- 1 cup vanilla sugar (see Cook's Note)
- 3 large eggs
- 1 1/2 teaspoons pure vanilla extract
- 2 1/4 cups all-purpose flour
- 1/2 teaspoon nutmeg
- 1 teaspoon baking soda
- 1/2 teaspoon fine salt
- 1/2 cup sour cream
- 1 large Gala or other baking apple, peeled, cored, and finely chopped (about 1 cup)
- 1/2 cup apple butter
- Special equipment: 2 (12-cup) muffin pans
- Preheat oven to 350 degrees F. Line 24 muffin tins with paper liners.
- For the frosting:
- 8 ounces cream cheese, at room temperature
- 1 stick unsalted butter, at room temperature
- 1 1/2 teaspoons vanilla extract or vanilla paste
- 1 teaspoon lemon juice
- 4 cups confectioners' sugar

Place all ingredients in a large stockpot and brig to a boil
- 2 quarts purified water
- 1 large onion, cut into 1-inch pieces
- 3 celery stalks, cut into 1-inch pieces
- 1 carrot, cut into 1-inch ieces
- 1 bunch scallions, chopped
- 8 garlic cloves, minced
- 8 sprigs fresh parsley
- 8 ounces mushrooms cut in 1/2-inch slices
- 2 bay leaves
Chicken Fricassee with Tarragon

1.Season chicken with salt and pepper
- 2 1/2 pounds bone-in chicken pieces, skin removed
- 1/4 teaspoon salt
- Freshly ground pepper, to taste
- 2 tablespoons all-purpose flour
- 1 tablespoon extra-virgin olive oil
- 5 large shallots, finely chopped (about 1 cup)
- 1 cup dry white wine
- 1 1/2 cups reduced-sodium chicken broth
- 1 medium carrot, peeled and thinly sliced
- 1 pound button mushrooms, wiped clean and halved or quartered
- 4 sprigs fresh tarragon, plus 4 teaspoons chopped (see Substitution Note)
- 1 tablespoon cornstarch mixed with 1 tablespoon water
- 1/4 cup reduced-fat sour cream
- 2 teaspoons Dijon mustard
BBQ2 Rub

Combine all ingredients, mix well, and store in an airtight container
- 3/4 cup Sugar In The Raw
- 1/2 cup salt
- 1/4 cup paprika
- 2 tablespoons finely ground black pepper
- 1 tablespoon granulated garlic
- 1 tablespoon onion powder
- 1 tablespoon ground cumin
- 1 tablespoon chili powder
- 1 teaspoon dry mustard
- 1 teaspoon ground coriander
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon ground allspice
David's Grill Steak Fries

Preheat grill to high. Toss steak fries in a large bowl with olive oil, salt, and pepper

- 2 Tbsp. olive oil
- 1/2 tsp. salt
