Marcela's Mexican Chocolate Bread Pudding

Butter an 8 by 8 by 2-inch glass baking dish
- 1 tablespoon unsalted butter, for greasing
- 5 cups (1-inch) bread cubes, preferably 1 day old (from about 3 bolillo rolls or 3/4 of a loaf of French bread)
- 2 3/4 cups whole milk
- 2 (3.1-ounce) discs Mexican chocolate,* chopped (recommended: Ibarra)
- 1 cup granulated sugar
- 2 whole eggs
- 3 large egg yolks
- 1/3 cup raisins
- 1 tablespoon ground cinnamon
- Powdered sugar, for dusting

Soup: Egg Drop

In a medium saucepan, bring the stock to a simmer
- 6 cups low-sodium chicken (or vegetable) stock
- 1/2 cup thinly sliced scallions
- 1/4 cup fresh baby spinach or baby arugula
- 4 shitake mushrooms, stems removed, wiped clean, and thinly sliced
- 1 tsp low-sodium soy sauce
- 1/8 tsp finely ground white pepper
- 2 large eggs, lightly beaten
PGX Basil Grilled Chicken Salad

Mix garlic, oil, vinegar, sugar, and mustard
- 4 boneless, skinless chicken breast halves
- 2 garlic cloves chopped or minced
- 1/4 cup olive oil
- 1/4 cup white wine vinegar
- 1 tsp. sugar
- 1 tsp. Dijon mustard
- 1/2 cup fresh basil chopped
- 1 bag of Romaine lettuce (about 2 cups)
- 1/4 cup of Parmesan cheese (or asiago)
Giada's Sweet and Savory Bread Pudding

Set an oven rack in the center of the oven
- 2 tablespoons butter, plus extra for greasing the pan
- 1 pound butternut squash, peeled, and cut into 3/4-inch pieces
- 4 parsnips, peeled, and cut into 3/4-inch pieces
- Kosher salt for seasoning
- Freshly ground black pepper for seasoning
- 1 (1 pound) loaf brioche, challah, or sourdough bread, cut or torn into 1-inch pieces
- 3 cups heavy cream
- 8 eggs, beaten
- 3/4 cup brandy
- 1/4 cup vegetable oil
- 3 tablespoons brown sugar
- 2 tablespoons cinnamon
- 1 tablespoon fresh thyme leaves, chopped
Salad: Caesar Salad with Hard-Cooked Eggs

1. Preheat oven to 350 degrees
- 1/2 baguette, sliced 1/4 inch thick (about 20 slices)
- 4 tablespoons olive oil
- Coarse salt and ground pepper
- 1/4 cup fresh lemon juice (from 2 lemons)
- 2 tablespoons grated Parmesan, plus more, shaved with a vegetable peeler
- 2 tablespoons light mayonnaise
- 2 anchovy fillets
- 1 garlic clove
- 8 hard-cooked eggs, peeled, 4 yolks reserved, remaining whites and eggs cut into bite-size pieces
- 2 heads romaine lettuce, cut into bite-size pieces
Bob's Pressure Cooker Swedish Meatballs

1. Add all ingredients, except for sour cream, to pressure cooker and securely lock on lid
- Making fresh meatballs combine:
- 2 pounds (32 oz.) frozen meatballs
- 2 teaspoons beef base mixed into 2 cups water
- 2 teaspoons minced garlic
- 1 1/2 teaspoon onion powder
- 1/4 teaspoon nutmeg
- 1/2 teaspoon allspice
- 1 tablespoon parsley flakes
- 16 ounces sour cream
- Salt
- Pepper to taste
- 1 cup white breadcrumbs with
- 1/2 cup heavy cream and let sit 5 minutes.
- Mix into 1 pound lean ground beef, then add
- 2 teaspoons onion powder
- 2 tablespoons parsley
- 2 teaspoons salt
- 1/2 teaspoon pepper
- 1/8 teaspoon nutmeg

- 1/3 cup frozen strawberries
- 1/3 cup light orange juice
- 1/2 small banana
- 1/4 cup liquid egg substitute
- 4 taspoons granulated no-calorie sweetener (or 2 packets)

- 1/2 crushed ice
