Chew: Carla Hall's White Chocolate Cream Cheese Frosting

Beat cream cheese and butter in a large bowl with an electric mixer until combined
- 8 oz cream cheese (room temperature)
- 1/2 stick butter (room temperature)
- 1 cup white chocolate chips (melted)
- 1 teapsoon vanilla
- 2 cups powdered sugar
Paula's Banana Coffee Muffins

Preheat oven to 350 degrees F
- 1/3 cup melted butter
- 4 ripe bananas, smashed
- 3/4 cup sugar
- 1 egg, beaten
- 1 teaspoon vanilla extract
- 1 1/2 tablespoons strong coffee
- 1 teaspoon baking soda
- Pinch salt
- 1 1/2 cups all-purpose flour
- 1 cup chopped pecans, toasted or raw
Empanadas

For the empanada dough: Combine the flour, baking powder, sugar and salt in a large bowl
- Empanada Dough (see Cook's Note, below):
- 3 cups all-purpose flour, plus more for the work surface
- 1 tablespoon baking powder
- 2 teaspoons sugar
- Pinch salt
- 1/2 cup lard or shortening
- 1 egg
- 3/4 cup chicken stock
- Empanada Filling:
- 2 tablespoons olive oil
- 1 pound ground beef
- 1 tablespoon garlic salt
- 2 tablespoons tomato paste
- 2 tablespoons vinegar
- 2 teaspoons ground cumin
- 1 teaspoon chili powder
- 1 teaspoon dried oregano
- 1 teaspoon seasoned salt
- 5 cloves garlic, minced
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 medium onion, chopped
- Oil or shortening, for frying
- Aioli Dip:
- 1 cup real mayonnaise, such as Kraft
- 1 tablespoon adobo sauce
- Juice of 1/2 lime
Sweet & Sour BBQ Sauce

Heat the oil in a small saucepan over high heat
- 2 tablespoons peanut oil
- 2 cloves garlic, chopped
- 2 tablespoons finely grated peeled fresh ginger
- 1/2 cup dry sherry
- 1/2 cup hoisin sauce
- 1/2 cup ketchup
- 1 1/2 teaspoons Vietnamese chili-garlic sauce
- 2 teaspoons soy sauce
- 2 teaspoons dark sesame oil
Paula's Sweet Home Potato Fries

Preheat oil in large cast iron skillet or deep-fryer
- Ingredients

- 2 tablespoons vegetable oil
- 4 sweet potatoes, peeled and cubed
- Salt
- Sugar
- Preheat oil in large cast iron skillet or deep-fryer.
- Place sweet potatoes in a large saucepan and cover with cold water. Bring to a boil, reduce heat, and cook until slightly tender, about 10 minutes. Drain the sweet potatoes well in a colander.
- Add sweet potatoes to skillet or deep-fryer. Cook undisturbed for 5 to 6 minutes until nice and crisp. Garnish with sugar or salt, to taste.
Salad: Cole Slaw

In a large bowl, combine all ingredients, cover and refrigerate until ready to serve
- 2 large heads cabbage, chopped
- 1 large onion, chopped
- 1 green or red bell pepper, chopped
- 1 tablespoon black pepper
- 1 tablespoon salt
- 1 tablespoon celery seed
- 1/4 cup apple cider vinegar
- 3 carrots, shredded
- 1 cup mayonnaise
- 3 to 4 tablespoons sugar

- 1 can (17.5 oz.) Pillsbury® Grands! refrigerated cinnamon rolls with icing
- 1 package (8 oz.) cream cheese, softened
- 1/2 cup Domino® or C&H® Granulated Sugar
- 2 teaspoons sour cream
- 1 teaspoon lemon juice
- 1 teaspoon vanilla

- FOR THE MEATBALLS:
- 1/2 pound ground pork
- 1/2 pound ground beef
- 2 cups ricotta cheese drained
- 1 egg (beaten)
- 1/4 cup flatleaf parsley
- A few gratings nutmeg
- Salt (to taste)
- Flour for dusting
- Olive oil for frying
- 1 cup freshly grated Parmigiano-Reggiano
