Baked Western Omelet

Preheat oven to 375ºF. Lightly spray a 10-inch glass pie pan with non-stick cooking spray
- 4 large eggs
- 1/4 cup water
- 4 ounces of cooked ham, cut into thin strips
- 1 cup sliced mushrooms
- 1/2 cup chopped tomato
- 1/4 cup sliced scallions
- 1/4 cup chopped green bell pepper
- freshly ground black pepper, to taste
Decadent Nutella Waffles

Combine flour, baking powder, baking soda, salt and cinnamon in medium mixing bowl
- 2 cups flour
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 1/2 cups buttermilk
- 4 eggs
- 3/4 cup melted unsalted butter
- 4 to 5 heaping tablespoons Nutella
Macaroni and Cheese Ham Pie

Heat oven to 400°F. Spray 10-inch or 9 1/2-inch glass deep-dish pie plate with cooking spray
- 3 cups shredded Cheddar cheese
- 1 cup cubed cooked ham
- 1 cup uncooked elbow macaroni
- 2 1/4 cups milk
- 2 eggs
- 1/2 cup Original Bisquick mix
- 1/4 teaspoon salt
- chopped fresh parsley, if desired
Pasta in a Rice Cooker

This recipe is a favorite of mine and my husband's
- 2 cups water or broth, of choice
- 1 cup homemade or jar pasta sauce
- 1/4 cup cooked ground beef or bulk cooked hot sausage, optional
- 1/4 teaspoon salt
- 1 teaspoon olive oil
- 1/8 teaspoon dried oregano
- 1/8 cup romano cheese
- 2 cups uncooked rigatoni pasta or penne
Pork Chops, Italian-Style Skillet

Heat the oil in a 12-inch skillet over medium-high heat
- 1 tablespoon vegetable oil (I prefer a good olive oil)
- 6 bone-in pork chops, 3/4-inch thick
- 1 jar (24 oz) Prego Fresh Mushroom Italian Sauce
- 4 cups cooked + drained ziti (or pasta of your choice, such as penne)
Chicken and Biscuits Casserole

- 2 tablespoons butter
- 1/2 cup diced yellow onion
- 1/4 cup diced celery
- 2 cans condensed cream of chicken soup
- 2 cups milk
- 1/3 cup grated Parmesan cheese
- 1/4 teaspoon poultry seasoning
- 1/8 teaspoon black pepper
- 1 1/2 cups frozen peas and carrots medley
- 2 cups cooked chicken, diced
- 2 tablespoons all-purpose flour
- 1 can ready-to-bake biscuits
Banana Bread, Whole Wheat

Heat oven to 350°F. Grease bottom only of 8x4 or 9x5-inch loaf pan with shortening or cooking spray
- 3/4 cup all-purpose flour
- 3/4 cup whole wheat flour
- 1/2 cup sugar
- 3/4 cup mashed very ripe bananas (about 2 medium)
- 1 container (6 oz) Yoplait Greek Fat Free plain yogurt
- 1/3 cup vegetable oil
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 eggs
- 1/2 cup coarsely chopped nuts
Apple Crisp, Skillet

For The Topping: Adjust oven rack to middle position and heat oven to 450°F
- Topping:
- 3/4 cup unbleached all-purpose flour
- 3/4 cup pecans, chopped fine
- 3/4 cup old-fashioned rolled oats (see note)
- 1/2 cup packed light brown sugar
- 1/4 cup granulated sugar
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon table salt
- 8 tablespoons (1 stick) unsalted butter, melted
- Filling:
- 3 pounds Golden Delicious apples (about 7 medium), peeled, cored, halved, and cut into 1/2-inch-thick wedges (see note)
- 1/4 cup granulated sugar
- 1/4 teaspoon ground cinnamon (optional)
- 1 cup apple cider
- 2 teaspoons juice from 1 lemon
- 2 tablespoons unsalted butter
Bacon and Cheddar Egg Mug Scrambler

Spray inside of large microwave-safe mug with cooking spray
- Pam Original No-Stick Cooking Spray
- 1/2 cup Egg Beaters Original
- 2 tablespoons shredded Cheddar cheese, divided
- 1 tablespoon real bacon bits
- 2 teaspoons sliced green onion
- dash ground black pepper
Iced Mexican Coffee

In blender, place all ingredients except ice, whipped cream and cinnamon sticks
- 1 cup milk
- 1/4 cup chocolate-flavored syrup
- 1/4 cup Tequila (optional)
- 2 tablespoons sugar
- 2 tablespoons instant coffee granules or crystals
- 1/2 teaspoon ground cinnamon
- 3 cups crushed ice
- whipped cream, if desired, for garnish
- cinnamon sticks, if desired, for garnish
