Roasted Red Pepper Fettuccine Alfredo

Process the pepper in a food processor or blender until it’s a paste-like consistency
- 10 ounces cooked fettuccine
- 1 roasted red bell pepper (from a jar is ok)
- 1 boneless, skinless chicken breast, cooked and sliced
- 2 cups heavy cream
- 2/3 cup shredded Parmesean cheese
- 1 teaspoon minced garlic
- pinch salt
- parsley, for garnish
Maple Pecan Pie

Preheat oven to 350°F. and place rack at lowest position
- 1 prepared unbaked 9-inch pie shell
- 1 cup pure maple syrup
- 1/2 cup light brown sugar, packed
- 3 eggs
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 1/4 cups coarsely chopped pecans

- 1/4 cup all-purpose flour

- 2 cups Original Bisquick mix

These brownies are delicious and very easy to make
- 1 pound unsalted butter
- 1 pound plus 12 ozs semisweet chocolate chips, divided
- 6 ozs unsweetened chocolate
- 6 extra-large eggs
- 3 tablespoons instant coffee powder
- 2 tablespoons real vanilla extract
- 2 1/4 cups sugar
- 1 1/4 cups all-purpose flour, divided (1 cup for batter and 1/4 cup in the chips and nuts)
- 1 tablespoon baking powder
- 1 teaspoon kosher salt
- 3 cups diced walnut pieces
Set and Forget Pot Roast

Trim excess fat from roast and place in a large crockpot
- 1 rump or other beef roast (3 to 4 lbs)
- 5 or 6 red potatoes, quartered with skins left on
- 2 medium onions, quartered
- 2 cups prepared baby carrots
- 2 cans tomato soup concentrate (can use fat free)

Bring a large pot of water to a boil over medium heat, then salt the water

- 1 lb cavatappi or elbow pasta with lines on conchiglie (small fat tube/shell shaped pasta with lines)
- 2 tablespoons extra-virgin olive oil
- 6 tablespoons butter
- 3 ribs celery with leafy tops, finely chopped
- 1 medium onion, finely chopped
- 1/2 small red bell pepper, seeded and finely chopped
- 3 to 4 cloves garlic, finely chopped
- 1 bay leaf
- 2 about 2 tablespoons freshly chopped thyme leaves, several sprigs
- 1 about 1 tablespoon grated lemon zest
- freshly ground black pepper
- 3/4 lb fresh lump crabmeat, picked for shells and flaked
- 1 tablespoon seafood seasoning (recommended: Old Bay)
- 3 tablespoons all-purpose flour
- 2 1/2 cups milk
- freshly grated nutmeg, to taste
- 1 tablespoon Dijon mustard
- 1 about 1 rounded cup grated sharp white Cheddar
- 1 about 1 rounded cup shredded Gruyere or Swiss cheese
