- 1 cup granulated sugar
- 1 tablespoon white corn syrup

- 1 recipe Basic Vanilla Pastry Cream, chilled

- 1 cup 2% milk
- 1/2 vanilla bean
- 1 1/2 teaspoons vanilla bean paste

- 1/2 cup (125 ml) Hard margarine (or butter), softened
- 4 oz. (125 g) Cream cheese, softened
- 1 cup (250 ml) All-purpose flour
- Filling:
- 3/4 cup (175 ml) Cooked tiny shrimp (or 1 can 4 oz., 113 g, rinsed and drained)
- 1 Large egg
- 1 tbsp (15 ml) Chopped chives
- 1/4 tsp (1 ml) Onion powder
- 1/4 tsp (1 ml) Dill weed
- 1/4 tsp (1 ml) Salt
- 1/16 tsp (.5 ml) Pepper
- 1/2 cup (125 ml) Milk
- 1 cup (250 ml) Grated Swiss cheese

Dough: Mix first 5 ingredients together
- Dough for White or Dark:
- 10 egg yolks
- 10 tbsp. sugar
- 10 tbsp. oil
- 1 pkg. vanilla
- 1 lemon zest
- flour as needed (approx 3+ cups)
- White Filling:
- 10 egg whites, beaten stiff with a little salt (or crème of tartar)
- Add:
- 400 gr. Sugar
- 500 gr. Almonds, blanched, skin removed, ground
- 1 pkg. vanilla
- 1 lemon zest
- Chocolate Filling:
- 10 egg whites, beaten stiff with a little salt (or crème of tartar)
- Add:
- 300 gr. Almonds, toasted, ground
- 300 gr. Sugar
- 200 gr. Chocolate (chopped fine w/knife)
- Cinnamon (to taste, I use 1 tbsp)
- 1 pkg. vanilla (I use 2 tsp pure vanilla extract)
Rolo Cheesecake Bars

O.M.G!!! Love Rolo's, they're one of my favorites, and cheesecake
- CRUST:
- 3 cups of graham cracker crumbs
- 1 cup sugar
- 2 STICKS MELTED BUTTER (16 TABLESPOONS)
- STIR ALL TOGETHER AND PRESS INTO A 9X13 PAN LINED WITH NONSTICK FOIL.
- BAKE AT 350 FOR 7-10 MINUTES AND COOL.
- FILLING:
- BEAT: 2 8-OUNCE PACKAGES OF CREAM CHEESE
- 2 EGGS
- 1 C. SUGAR
- 1/4 C. FLOUR
- ONCE SMOOTH, ADD ONE PACKAGE OF MINI ROLOS (THE UNWRAPPED ONES)
- POUR ONTO THE COOL CRUST AND BAKE AT 350 FOR 30-35 MINUTES.
- LET COOL AND ADD GLAZE.
- GLAZE:
- MELT IN THE MICROWAVE:
- 1 STICK BUTTER & 6 OUNCES CHOCOLATE CHIPS.
- STIR SMOOTH AND ADD 4 TSP. LIGHT CORN SYRUP.
- POUR SMOOTHLY ON BARS AND CHILL OVERNIGHT.
- CUT WITH A BIG KNIFE! I ADDED A CHOCOLATE DRIZZLE AND A HALF A ROLO ON TOP!
