- 3 cups sifted cake flour (or all purpose)
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 3/4 cup butter (or marg) softened
- 1 1/2 cups sugar or cane sugar
- 2 eggs
- 1 teaspoon vanilla
- 1/2 teaspoon clubhouse rum (grocery store)
- 1 1/4 cup milk
- 3/4 cup frozen blueberries (or fresh)
- 3/4 cup fresh or frozen cranberries – coat with 1/4 cup sugar
- partial can of raspberry pie filling
- apple slices – super thin (from 1 apple)
Homemade Hostess Ho-Ho's

1. Preheat oven to 350 degrees F
- FILLING:
- 4 x lg eggs
- 1 c sugar
- 5 Tbsp dark cocoa powder + more for dusting
- 1 Tbsp pure vanilla extract
- 1 c all purpose flour
- 1/4 tsp salt
- 5 Tbsp butter
- 1/2 c sugar
- 4 oz cream cheese, room temperature
- 1 1/2 c heavy cream, cold
- 1 1/2 tsp pure vanilla extract
- FROSTING:
- 2 c chocolate chips (i use ghirardelli - 1 c milk & 1 c bittersweet)
- 2 Tbsp butter
Milk Chocolate Mini Bundt Cakes

- FOR THE SWIRL
- 3/4 cup chopped walnuts or pecans
- 2 teaspoons unsweetened cocoa powder
- 2 teaspoons sugar
- FOR THE CAKE
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 stick (8 tablespoons) unsalted butter, at room temperature
- 1/3 cup sugar
- 1 large egg
- 1/2 teaspoon pure vanilla extract
- 1/2 cup whole milk (you can change to buttermilk, add 1/8 teaspoon baking soda with flour mix.)
- 7 ounces premium-quality milk chocolate, melted and cooled
- FOR THE GLAZE
- 2 ounces bittersweet chocolate
- 2 teaspoons light corn syrup
- 1 tablespoon chopped toasted walnuts or pecans (optional)
- (Note from Paula: I think Dorie left something out here. Recommend you add cream or milk to thin the glaze. I also added about 3/4 cup powdered sugar.)
Heavenly Ube Cake Recipe

1. Preheat oven to 325 degrees F (165 degrees C)
- Buttercream Icing:
- 2 1/2 cups cake flour, (sifted with baking powder and salt)
- 3 teaspoons baking powder
- 1 teaspoon salt
- 1 cup ube (purple yam), cooked and finely grated
- 3/4 cup milk + 1/8 cup milk
- 1 teaspoon pure vanilla extract
- 1/2 cup light corn syrup
- 7 egg yolks, lightly beaten
- 1/2 cup vegetable oil
- 7 egg whites
- 1 teaspoon cream of tartar
- 1 cup caster’s sugar
- 1 (12 ounce) jar macapuno (coconut preserves) *OPTIONAL – use as filling (available in the UK from specialist Asian stores)
- Egg whites 50 ml
- Refined sugar 100 g
- butter, cold, cut into cubes 250 g
- 2 tsps violet food colouring (or until desired shade is achieved)

- 8 tbsp. unsalted butter, at room temperature
- 3/4 cup light brown sugar, packed
- 2 1/4 cup all-purpose flour
- 1 (14 oz.) can sweetened condensed milk
- 1 tsp. vanilla extract
- 1/2 cup mini semisweet chocolate chips
- 1 1/2 lb. semisweet (or bittersweet) chocolate, coarsely chopped
