Vanilla Creme Brulee

Prepare the vanilla: Halve the vanilla bean lengthwise and scrape out the seeds with a paring knife

Here is a favorite recipe for zucchini fritters, which look a lot like potato latkes, except without the potato
- 1 pound (about 2 medium) zucchini
- 1 teaspoon coarse or Kosher salt, plus extra to taste
- 2 scallions, split lengthwise and sliced thin
- 1 large egg, lightly beaten
- Freshly ground black pepper
- 1/2 cup all-purpose flour
- 1/2 teaspoon baking powder
- Olive or another oil of your choice, for frying
- To serve (optional)
- 1 cup sour cream or plain, full-fat yogurt
- 1 to 2 tablespoon lemon juice
- 1/4 teaspoon lemon zest
- Pinches of salt
- 1 small minced or crushed clove of garlic

1 Dissolve yeast in warm water in 2 1/2-quart bowl
- 2 (1/4 ounce) packages yeast

Strawberry Layer Cake Recipe

Baking the Cake Layers: Preheat oven to 350˚F
- For the Cake:
- 12 eggs (cold or room temp)
- 2 cups sugar
- 2 cups flour (sifting not required)
- Frosting:
- 1 cup heavy whipping cream
- 2 (8oz) package cream cheese, softened at room temp
- 3/4 cup sugar
- Filling/Decor:
- 2 lbs Fresh strawberries (1 1/2 lbs to blend and put inside the cake and 1/2 lb to decorate the top)
- Chocolate chips to melt and decorate the top; optional
TLC's Piña Colada Cake

Prepare cake mix and bake according to package directions using 2 (9-inch) round cake pans
- CAKE
- 1 package (18-1/4 ounces) white cake mix,
- plus ingredients to prepare mix
- RUM FILLING
- 1/2 cup cold whipping cream
- 1/4 cup dark rum
- 2 tablespoons powdered sugar
- 3/4 teaspoon vanilla
- WHIPPED TOPPING
- 2 cups cold whipping cream
- 3/4 cup powdered sugar
- 2 teaspoons vanilla
- GARNISHES
- 1 fresh pineapple, peeled, cut in half lengthwise and cored
- 2 cups sweetened shredded coconut, toasted*
- To toast coconut, spread evenly on ungreased cookie sheet. Toast in preheated 350°F oven 5 to 7 minutes, stirring occasionally, until light golden brown.

- 12 to 14 pounds (2 k) leg of kid or lamb, cut into small pieces without removing the bone
- 1/4 cup extra virgin olive oil
- 1 cup dry white wine
- 1 cup water
- 6 large eggs (too many, next time 4)
- 2/3 cups grated Parmigiano
- 1/4 cup minced fresh parsley (didn't use this)
- Salt & Pepper to taste
- 1 tablespoon tomato paste (we added just before adding the wine, not included in original recipe)
