Sweet Potato Pie with Pecan Topping

1. To make the sweet potato puree, cover sweet potatoes with water in a large saucepan
- 2 to 3 sweet potatoes (1 1/2 pounds), peeled and cut into 2-inch chunks
- 2 large eggs
- 1/3 cup plus 1/2 cup packed light-brown sugar
- 3 tablespoons pure maple syrup
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 3/4 cup plus 1 tablespoon heavy cream
- 1 prebaked Piecrust, or 1 frozen store-bought (9-inch) crust
- 3 tablespoons butter
- 1 cup pecans, broken into pieces

White Amaretti: Mix all ingredients together
- White Amaretti:
- 4 cups minced almonds (skin removed)
- 4 egg whites (whipped)
- 10 oz. sugar
- vanilla extract
- Brown Amaretti:
- 6 cups almonds (minced)
- 2 cups sugar (always a little less)
- 1 – 2 tbsp cocoa powder
- 4 eggs (whole)
- ½ bottle of almond extract (small bottle)

- 2 boneless chicken breasts
- 1 pinch salt and pepper
- 1 splash vegetable oil
- 1 tablespoon butter
- 1 onion, chopped
- 2 cloves garlic, chopped
- 2 apples, cored and chopped
- 1/4 cup apple cider
- 1 tablespoon cider vinegar

- 1 cup cold heavy cream
- 1 (15-ounce) can pumpkin puree
- 1/3 cup evaporated milk
- 1 (3.4-ounce) box pumpkin spice flavored instant pudding mix
- 1 teaspoon vanilla extract
- 1 cup Spiced Pecans, recipe follows
- 1 teaspoon kosher salt
- 1/2 teaspoon ground cumin
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground orange peel

Preheat your oven to 180C/160C Fan/350F/Gas 4 and place 8 muffin/cupcake cases in to your muffin tin
- salted caramel frosting:
- 125 g caster sugar
- 125 g unsalted butter, very soft
- 2 eggs
- 2 tsps vanilla extract
- 150 g plain flour
- 1 tsp baking powder
- Chocolate covered caramel pieces
- 100 g butter, at room temperature
- 200 g icing sugar, sieved
- 1-2 tbsp milk
- 1 tsp vanilla extract (optional)
- 2 tbsp tinned caramel
- 1 tsp salt

- 1/2 cup all-purpose flour
- 1 teaspoon salt

- 6 skinless, boneless chicken breast halves
- 4 tablespoons butter
- 1/2 pound fresh mushrooms, sliced
- 1/4 cup chopped onion
- 1 cup chicken broth
- 1/2 cup white wine
- 2 tablespoons lemon juice
- 1 tablespoon cornstarch
- 1 tablespoon chopped fresh parsley, for garnish
