- 1 1/2 cups sour cream
- 1/2 cup cooked, finely crumbled bacon
- 1/2 cup melted butter
- 1/4 cup finely chopped assorted fresh herbs
- 2 green onions, chopped
- 1/2 teaspoon pepper
- 2 cups self-rising flour
- 6 ounces cream cheese, softened
- Garnishes: assorted fresh herbs, cooked and crumbled bacon
Wicked Good Boston Cream Pie

1. For the Pastry Cream: Heat half-and-half in medium saucepan over medium heat until just simmering
- Pastry Cream:
- 2 cups half-and-half
- 6 large egg yolks
- 1/2 cup (3 1/2 ounces) sugar

- 1/4 cup unbleached all-purpose flour
- 4 tablespoons cold unsalted butter, cut into four pieces
- 1 1/2 teaspoons vanilla extract
- Cake:
- 1 1/2 cups (7 1/2 ounces) unbleached all-purpose flour
- 1 1/2 teaspoons baking powder
- 3/4 teaspoon table salt
- 3/4 cup whole milk
- 6 tablespoons (3/4 stick) unsalted butter
- 1 1/2 teaspoons vanilla extract
- 3 large eggs
- 1 1/2 cups (10 1/2 ounces) sugar
- Glaze:
- 1/2 cup heavy cream
- 2 tablespoons light corn syrup
- 4 ounces bittersweet chocolate, chopped fine

Most ranch dressings are equal parts of buttermilk and mayonnaise
- Chill time: 1 hour (to thicken)
- 2 cups buttermilk
- 1/4 cup + 3 tablespoons Best Foods (Hellman’s) Mayonnaise
- 2 tablespoons reduced-fat sour cream
- 1 1/4 teaspoon dried parsley
- 1/2 + 1/8 teaspoon black pepper
- 1/2 + 1/8 teaspoon salt
- 1/2 + 1/8 teaspoon Accent
- 1/4 + 1/8 teaspoon garlic powder
- 1/4 + 1/8 teaspoon onion powder
- 1/4 + 1/8 teaspoon dried thyme
- 3/4 teaspoon xanthan gum (thickening agent)

- 1 1/2 tablespoons melted butter, to grease the pans, plus 1/4 pound (1 stick) unsalted butter, melted and cooled
- 3 extra-large eggs, at room temperature
- 2/3 cup sugar
- 1 teaspoon pure vanilla extract
- 1 cup all-purpose flour
- 1/4 cup cornstarch
- 1/2 teaspoon baking powder
- 1/4 teaspoon kosher salt
- 1/3 cup sweetened shredded coconut
- Confectioners' sugar, optional

- Coconut Crust:
- 1 1/2 cups sweetened flaked coconut
- 1/4 cup sugar
- 1/4 cup all-purpose flour
- 1 large egg white, at room temperature
- Cheesecake Base:
- 3 packages 250 gram packages of cream cheese, at room temperature
- 1 tin 300 mL tin sweetened condensed milk
- 1 tablespoon freshly grated lime zest
- 2 teaspoons vanilla extract
- 2 large eggs, at room temperature
- 1 large egg yolk, at room temperature
- 1/2 cup fresh lime juice
- Lime Curd:
- 2 large eggs
- 2 large egg yolks
- 1/2 cup sugar
- 1 tablespoon finely grated lime zest
- 1/2 cup fresh lime juice
- 1/2 cup unsalted butter, cut into pieces
- 1/4 cup sour cream
- Topping:
- 1 cup whipping cream

- 3/4 cup Nancy’s Skinny Ranch Dressing or 3/4 cup of a store-bought reduced-fat ranch dressing, see shopping tip
- 1/4 cup fat-free sour cream or fat-free plain yogurt
- 3 tablespoons champagne or sherry wine vinegar
- 1 teaspoon garlic, chopped (from a jar), or 2 cloves chopped
- 1/4 cup + 2 tablespoons blue cheese, crumbled
- 1/4 cup reduced-fat cottage cheese
