Pasta Caprese

Whisk the olive oil, lemon juice, shallot and garlic in a large bowl
- 1/3 cup extra-virgin olive oil
- 1/4 cup fresh lemon juice
- 1 shallot, minced
- 1 small clove garlic, minced
- Kosher salt and freshly ground pepper
- 1 teaspoon sugar (optional)
- 2 pounds mixed heirloom tomatoes, cored, seeded and cut into 1/2-inch pieces
- 1 pound pasta, such as campanelle, penne or fusilli
- 12 ounces fresh mozzarella cheese, cut into 1/2-inch pieces
- 1/2 cup chopped fresh basil
- 1/2 teaspoon grated lemon zest
Cinnamon Streusel Dessert Pizza

Mix together streusel ingredients with a fork, or your clean hands, then side aside
- Streusel:
- Pizza dough (You can make your own, I just bought some refrigerated dough at the grocery store)
- 1 TBSP butter, melted
- Cinnamon
- 1/2 cup plus 1/3 cups all purpose flour
- 1/3 cup white sugar
- 1/4 cup brown sugar
- 2 TBSP vegetable shortening
- 2 TBSP olive oil *
- Icing:
- 1 cup powdered sugar
- 1 TBSP milk
- 1/2 tsp. vanilla
Mini Lemon Tarts

??If you are using frozen blueberries make sure they are frozen without sugar
- Pastry:
- 3 oz (90 g) butter, cut in chunks
- 3 oz (90 g) cream cheese, cut in chunks
- ½ tsp (2 mL) salt
- 2 cups (500 mL) all-purpose flour
- Lemon Curd:
- 1 cup (250 mL) granulated sugar
- ½ cup (125 mL) unsalted butter
- 1 tbsp (15 mL) grated lemon rind
- ¼ cup (50 mL) lemon juice
- 4 eggs, well beaten
- Blueberries:
- ½ cup (125 mL) granulated sugar
- 1 egg white
- 1 cup (250 mL) blueberries, fresh or frozen defrosted
Cannoli with Creamy Ricotta

Preheat oven to 375. Lightly grease two baking sheets with baking spray; set aside
- For the Cannoli Shells:
- 2 large egg whites
- 1/3 cup sugar
- 1 tablespoon canola oil
- 1 tablespoon butter, melted

- 1/2 cup heavy whipping cream

Easy French Macarons

Whisk together almond meal and confectioner's sugar and sift over a large bowl
- 1 1/4 cups almond meal
- 1 3/4 cups confectioner's sugar
- 1/4 teaspoon salt
- 4 large egg whites
- 1/2 cup granulated sugar
- 1/4 teaspoon almond extract
- Strained jam or other desired fillings
Homemade Ranch Dressing

Mince the garlic with a knife and then sprinkle about an 1/8 to ¼ teaspoons of salt on it and mash it into a paste...
- 1 clove (to 2 Cloves) Garlic
- Salt To Taste

- Instead of pumpkin pie spice:
- 4 tbsp butter
- 2/3 cup milk
- 3/4 cup mashed sweet potato (about 2 sweet potato, baked)
- 1/2 cup sugar
- 2 eggs, room temperature
- 2 packets active dry yeast (or 4-1/2 teaspoons)
- 4 1/4 cup flour
- 2 tsp pumpkin pie spice plus
- 1/2 tsp cinnamon
- 2 tsp cinnamon
- 2 tsp cinnamon
- 1 tsp nutmeg
- 1/2 tsp allspice
- 1/2 tsp cardamom
- NOTE: I buy Baker's Cinnamon Filling from www.kingarthurflour.com because it makes the BEST cinnamon filling To make your own you will need:
- For the filling:
- 1/2 cup brown sugar
- 1 tbsp cinnamon
- 4 tbsp butter, very soft
- For the icing:
- 4 oz cream cheese, softened
- 4 Tbsp. butter, softened
- 2 cups powdered sugar
- 2 Tbsp. Pure Maple Syrup, optional (not pancake syrup)
