Banana Cream Cake

- 1 box yellow cake mix (& ingredients to make cake)
- 2 box (small) instant banana pudding
- 4 c milk
- 8 oz. whipped topping
- 20 vanilla wafers, crushed
- sliced bananas - use your own judgment
Blueberry Maple Refrigerator Oatmeal

In a half pint (1 cup) jar, add oats, milk, yogurt, chia seeds, and maple syrup
- 1/4 cup uncooked old fashioned rolled oats
- 1/3 cup skim milk
- 1/4 cup low-fat Greek yogurt
- 1-1/2 teaspoons dried chia seeds
- 2 teaspoons maple syrup (more or less to taste)
- 1/4 cup blueberries (or enough to fill jar)
Chinese Coconut Buns

To prepare the Bun Filling: Mix everything together
- Japanese-Style Sweet Bun Dough:
- 375 g bread flour
- 100 g plain flour
- 35 g milk powder
- 75 g caster sugar
- 3/4 teaspoon salt
- 1 sachet (7g or 2 1/2 tsp) instant dry yeast
- 1 egg, lightly beaten
- 150 ml (approx.) lukewarm water, adjust as necessary
- 40 g butter, cubed
- Water-Roux Paste:
- 25 g (just under 2 tbsp) bread flour
- 125 ml (1/2 cup) water
- Water-Roux is basically 1 part bread flour to 5 parts water.
- Bun Filling:
- 100 g softened butter
- 45 g plain flour, sifted
- 50 g milk powder, sifted
- 45 g caster sugar, sifted
- 20 g desiccated coconut
- Mexican Topping:
- 30 g softened butter
- 10 g caster sugar, sifted
- 20 g plain flour, sifted
- 1/2 egg, lightly beaten for eggwash
- White sesame seeds

1. Combine spreadable cheese, 3 tablespoons almonds, and 2 tablespoons chopped fresh parsley in a small bowl
- 1/3 cup light garlic-and-herbs spreadable cheese (such as Boursin light)
- 1/4 cup slivered almonds, toasted, coarsely chopped, and divided
- 3 tablespoons chopped fresh parsley, divided
- 4 (6-ounce) skinless, boneless chicken breast halves
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 1/2 teaspoons butter
Michael Smith's Spaghetti and Meatballs

- 1/2 cup bread crumbs
- 1/2 cup milk
- 1 pound ground beef
- 1 onion, peeled then grated on a cheese or potato grater

- 1/2 lb mortadella, sliced and chopped
- 1/2 lb provolone, thinly sliced
- 1/2 lb capicola (hot ham), very thinly sliced
- 1/4 lb prosciutto, very thinly sliced
- 2-3 slices each pepperoni or salami, chopped
- 1-2 slices sopressato, chopped (optional)
- 1 1/2 cups ricotta
- 1 entire basket Easter cheese (fromaggio fresca)
- 2 tablespoons parmesan cheese, freshly grated
- 2 tablespoons romano cheese, freshly grated
- 3/4 teaspoon whole black peppercorns, cracked
