Chicken or Turkey Tetrazzini

I adapted this from the Good Housekeeping Illustrated Cookbook
- 3 pounds of boneless skinless chicken breasts (4 to 6 breasts depending on size)
- 2 small onions
- 1/4 teaspoon pepper
- 1 1/2 tablespoons salt or to taste
- Chicken stock/broth
- 1 16 ounce package spaghetti
- 1/2 cup butter (divided into 2 Tbl and 6 Tbl)
- 1 pound mushrooms, sliced
- 1 tablespoon lemon juice
- 1/2 cup all-purpose flour
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoonp paprika
- 1/2 cup dry sherry (optional)
- 1 cup half-and-half
- 6 tablespoons or 3 ounces fresh grated parmesan cheese

- 8 ounces canned solid white Albacore tuna packed in water, drained
- 1/3 cup finely chopped red onion
- 1/3 cup finely chopped sweet pickles or cornichons
- 2 tablespoons mayonnaise, or to taste
- 1/2 teaspoon mustard (fancy or plain)
- Freshly ground black pepper, to taste
- Freshly squeezed lemon juice (optional)
Ruth Chris Crab Cakes

1.Place eggs in a mixing bowl and mix well with a wire whip
- CRAB SAUCE
- (4oz) 2 Each Eggs, Whole (Out of Shell)
- 3/4 Cup Mayonnaise
- 1/4 Tablespoon Blackening Seasoning
- 2 Tablespoons Creole or Dijon Mustard
- 1/4 Teaspoon Salt
- 1/4 Teaspoon Fresh Chopped Parsley
- CRABMEAT MIXTURE
- 1 lb. Jumbo Lump Crabmeat (fresh or canned)
- 1 cup Finely Crushed Crackers (Ritz or similar brand)
Reduced Calorie Blossom Sauce

This is good with crab cakes and fried onions
- 1/2 cup light mayonnaise
- 2 tablespoons creamy horseradish (adjust to taste)
- 1 tablespoon ketchup (adjust to taste)
- 1 teaspoon sweet chili sauce
- 1/4 teaspoon paprika
- 1/4 teaspoon cayenne pepper (or use part Ancho pepper)
- 1/4 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 1 pinch ground black pepper
Baked Mashed Potatoes with Parmesan Cheese and Bread Crumbs

This is an adaptation of a recipe by Giada De Laurentiis
- 1 tablespoon butter
- 4 pounds russet potatoes, peeled, cut into 1-inch pieces
- 1/2 to 3/4 cups whole milk
- 1/2 cup (1 stick) butter, melted
- 8 ounces sour cream
- 2 shallots minced
- 1 1/2 cups grated mozzarella
- 1 cup freshly grated Parmesan, divided into 3/4 and 1/4 cups
- Salt and freshly ground black pepper
- 2 tablespoons panko bread crumbs
Cocktail Sauce

Easy, good cocktail sauce
- 1/2 cup Heinz chili sauce
- 1/2 cup Heinz ketchup
- 3 tablespoons prepared horseradish
- 2 teaspoons freshly squeezed lemon juice, plus lemon zest for topping
- 1/2 teaspoon Worcestershire sauce
- 1/4 teaspoon Tabasco sauce
Chicken Salad Croissant Sandwiches

Add the cooked shredded chicken, celery, grapes and green onion to a large bowl
- 4 cups cooked, shredded chicken
- 1 1/2 cups chopped celery
- 2 cups red grapes, halved
- 2 green onions, thinly sliced
- 1 cup mayonnaise
- 1/4 cup sour cream or ranch dressing (optional)
- 2 Tablespoons fresh dill, chopped
- 1 teaspoon black pepper
- 1 teaspoon salt
- 1 tablespoon lemon juice
- 8 Croissant rolls
Kathys Pork Butt Rub

Makes 2 cups. 1/2 cup will cover a 6 1/2 to 7 pound Butt
- 1/4 cup paprika (I use 2 tablespoons each of regular and smoked)
- 1/4 cup kosher salt
- 1/4 cup sugar
- 1/4 cup brown sugar
- 1/4 cup ground cumin
- 1/4 cup chili powder (I use 2 tablespoons each of regular and ancho)
- 1/4 cup granulated garlic (or 2 tablespoons of garlic powder)
- 2 tablespoons mustard powder (ground mustard)
- 2 tablespoons onion powder
- 1 tablespoons fresh ground black pepper
- 1 to 2 tablespoons cayenne
