At least an hour in advance, season the cutlets with salt and pepper
- 8 1/4 th inch thick chicken cutlets
- Kosher salt and freshly ground black pepper
- 8 thin slices deli ham (2/3 pound)
- 16 thin slices Gruyere or Swiss cheese (2/3 pound)
- 2 teaspoons fresh thyme leaves (8 sprigs, leaves only)
- 1/4 cup flour
- 1 teaspoon paprika
- 1 cup Panko bread crumbs
- 2 eggs
- 2 teaspoons water
- 1 teaspoon olive oil
- 2 teaspoons butter
- Dijon Wine Sauce Yield: 2 cups
- 3 tablespoons butter
- 3 tablespoons flour
- 1 1/4 cup 2% milk
- 1 1/4 cup chicken stock*
- 3 tablespoons Dijon mustard
- 3 tablespoons Parmesan cheese, finely grated (optional)
- 1 teaspoon thyme leaves (optional)
- Salt and pepper
Swiss Steak

Feel free to add mushrooms or carrots or green peppers
- 2 pounds beef cube steak (6 steaks)
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 3/4 cup all-purpose flour, reserving excess flour
- 2 tablespoons vegetable oil, divided in half
- 1 large onion, thinly sliced
- 2 to 3 carrots (2 cups) sliced into 1/2 inch slices (optional)
- 2 cloves garlic, minced
- 2 stalks celery, chopped
- 1 tablespoon tomato paste
- 1 (14.5-ounce) can diced tomatoes
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1 tablespoon Worcestershire sauce
- 1 1/2 cups beef stock/broth

- 2 ounces cream cheese
- 1 tablespoon mayonnaise
- 1/4 cup sour cream
- 1 tablespoon butter, softened
- 1/4 teaspoon seasoning salt
- 1/8 teaspoon paprika
- 4 teaspoons onions, minced
- 4 teaspoons green peppers, minced
- 1/4 cup mozzarella cheese, shredded

Make Ahead Mashed Potato Casserole

- Potato Ingredients
- 5 pounds russet potatoes, peeled and cut into 1 inch cubes
- 4 garlic cloves (optional)
- 2 shallots, minced (optional)
- Kosher salt - 2 teaspoons, one at a time and taste
- Freshly Ground pepper, to taste
- 1 1/2 stick butter (12 - tablespoons), cubed and slightly softened
- 1 cup (8 ounces) sour cream
- 3/4 to 1 cup warm heavy cream
- Topping
- 1 cup Panko bread crumbs
- 1 cup parmesan cheese
- 5 tablespoons butter
Jalapeno Ginger Rice with Scallions

I needed to use up some fresh ginger, jalapeno and scallions and was planning to cook rice
- 2 cups of long grain rice, rinsed 3 times and drained.
- 2 cups of water
- 1 teaspoon salt
- 1 tablespoon olive oil
- 1 tablespoon minced ginger
- 1/2 cup sliced scallions
- 1 minced jalapeno (or 2 serrano chiles)
- 1 tablespoon minced garlic

Peanut Ginger Grilled Chicken

- 4 boneless chicken breasts
- 1/2 cup orange juice
- 1/2 cup smooth peanut butter
- 2 tablespoons packed dark brown sugar
- OR
- 2 tablespoons packed light brown sugar plus 1/2 teaspoon molasses
- 1/4 cup soy sauce
- 2 teaspoons minced fresh ginger
- 4 medium cloves garlic, minced
- 1 teaspoon red pepper flakes

Wash and sort peas. Combine the peas, hocks, carrots, celery and onions in a large soup pot or Dutch oven
- 1 pound green split peas, picked over, rinsed and drained (2 1/4 cup)
- 2 large smoked ham hocks or large ham bone with meat
- 1 large carrot, roughly chopped (1/2 cup)
- 1 stalk celery, roughly chopped (1 cup)
- 1 large onion, roughly chopped
- 10 sprigs fresh parsley
- 4 sprigs fresh thyme (1/4 teaspoon)
- 1 bay leaf
- 8 cups low-sodium chicken broth or stock, water or a combination of both
