BLUEBERRY HAND PIES

- 2 cups all-purpose flour
- 1/2 cup confectioners' sugar
- 1/2 teaspoon fine sea salt
- 1 1/2 sticks cold unsalted butter, cubed
- 1 large egg yolk
- 1/4 cup ice water
- FILLING
- 2 cups blueberries
- 1/3 cup granulated sugar
- 2 tablespoons all-purpose flour
- 2 tablespoons fresh lemon juice
- 1/4 teaspoon fine sea salt
- 1/4 teaspoon ground cinnamon
- 1 large egg beaten with 1 teaspoon water
- Turbinado sugar, for sprinkling
CHICKEN BREAST WITH TOMATOES & FETA

Preheat oven to 350°F. Place chicken on a baking pan and drizzle with 1/2 tablespoon of oil; turn to coat
- 1 lb. boneless, skinless chicken breasts
- 1 1/2 Tablespoons olive oil, divided
- 1/3 cup crumbled feta
- 5 Roma (plum) tomatoes, seeded and coarsely chopped
- 1/3 cup toasted pine nuts
- 1/4 cup finely chopped red onion
- 1 Tablespoon white wine vinegar
- 2 Tablespoons chopped fresh parsley
CARBONARA WITH SAFFRON

Bring a large pot of water to a boil, salt it, add the pasta and cook until al dente
- Salt and pepper
- 1 pound linguine, tagliatelle or egg tagliatelle pasta
- 1 1/2 cups chicken stock
- 1/4 teaspoon saffron (2 pinches)
- 3 tablespoons extra-virgin olive oil (EVOO)
- 1/3 pound thick-cut pancetta (from the deli counter), chopped into 1/4-inch dice
- 4 cloves garlic, finely chopped
- 1/2 cup dry white wine
- 2 teaspoons ground turmeric (2/3 palmful)
- 3 egg yolks
- 1/2- 2/3 cup grated pecorino romano cheese, plus more to pass around the table
- A generous handful of flat-leaf parsley, finely chopped
HUNGARIAN CHICKEN PAPRIKASH

Heat bacon grease in a large skillet over medium heat
- 2 tablespoons bacon grease
- 1 large onion, chopped
- 3 cloves garlic, chopped
- 3/4 teaspoon salt
- 1 teaspoon crushed red pepper flakes
- 3 tablespoons paprika
- 1 (2 to 3 pound) whole chicken, cut into pieces
- 1 cup water
- 1 (14.5 ounce) can diced tomatoes
- 2 tablespoons all-purpose flour

- 8 ounces cream cheese, softened
- 8 ounces goat cheese
- 3 tablespoons dried currants
- Pinch lemon zest
- 1 cup pistachios, toasted and chopped

PUFF PASTRY HEIRLOOM TOMATO TART

- 1 sheet frozen puff pastry (half of a 17-ounce package), thawed
- All-purpose flour, for dusting
- 1 8-ounce package cream cheese, at room temperature
- 1/3 cup sour cream
- 1/2 teaspoon finely grated lemon zest
- 1 teaspoon fresh lemon juice
- 1/4 teaspoon sugar
- Kosher salt and freshly ground pepper
- 2 tablespoons finely chopped fresh chives,
- plus more for topping
- 12 ounces assorted small heirloom tomatoes, halved
TERIYAKI NOODLES

Bring a large pot of water to a boil, over medium heat
- Salt
- 1 pound whole-wheat spaghetti
- 3 tablespoons high-temperature cooking oil, such as canola, sunflower, or peanut
- 3/4 pound flank steak, patted dry and thinly sliced on an angle
- Coarse black pepper
- 1 bunch scallions, cleaned and trimmed of root ends and rough tops, sliced on an angle
- 1 cup frozen shelled edamame, defrosted
- 2 inches fresh gingerroot, peeled and grated or finely chopped
- 3 to 4 garlic cloves, grated or chopped
- 1/3 cup teriyaki sauce

- 1 (16 oz) package wide egg noodles cooked according to package directions
