FETTUCCINE ALFREDO

- 1 tablespoon butter
- 2 small garlic cloves, minced
- 1 tablespoon flour
- 1 1⁄3 cups skim milk
- 2 tablespoons reduced-fat cream cheese
- 1 1⁄4 cups fresh parmesan cheese, grated and divided
- 4 cups cooked fettuccine
- 2 teaspoons fresh parsley, chopped
- fresh ground pepper
PORK WITH PAPRIKA, MUSHROOMS AND SOUR CREAM

Trim all visible fat from pork chops or pork loin roast, then cut meat into cubes about 1 inch square
- 1 1 1 4 pork loin, fat trimed and cut into cubes about 1 inch square (I used 4 thick pork loin chops)
- 1 1 1 T + 1 T sweet paprika (use Hungarian or Spanish paprika in a tin for best flavor)
- salt and fresh ground black pepper for seasoning pork
- 2-3 2-3 2-3 T olive oil (depending on your pan)
- 8-12 8-12 8-12 oz. crimini or white mushrooms, washed and cut into thick slices
- 1 1 1 onion, finely chopped
- 1 1 1 T finely minced garlic
- 1/2 1/2 1/2 tsp. dried thyme
- 1/2 1/2 1/2 tsp dried caraway seeds, ground or crushed (optional, but good)
- 1 1 1 can petite dice tomatoes plus juice (14.5 oz. can)
- 1/2 1/2 1/2 cup chicken stock (I used my homemade chicken stock)
- 2/3 2/3 2/3 cup sour cream
DUMP AND BAKE MEATBALL CASSEROLE

Instructions Preheat oven to 425 degrees F
- 1 (16 ounce) package uncooked rotini pasta
- 1 (25 ounce) jar marinara sauce
- 3 cups water
- 1 (14 ounce) package fully-cooked miniature (cocktail-size) meatballs (if using frozen meatballs, make sure that they are completely thawed before using)
- 2 cups shredded mozzarella (or Italian blend) cheese
- Optional: Parmesan cheese and fresh chopped herbs (such as basil, oregano, and parsley) for garnish

- 2 pounds ripe Bosc pears (4 pears)

- 1 teaspoon grated orange zest
- 1 teaspoon grated lemon zest
- 2 tablespoons freshly squeezed orange juice
- 2 tablespoons freshly squeezed lemon juice
- 1/2 cup granulated sugar
- 1/4 cup all-purpose flour
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 1/2 cups all-purpose flour
- 3/4 cup granulated sugar
- 3/4 cup light brown sugar, lightly packed
- 1/2 teaspoon kosher salt
- 1 cup old-fashioned oatmeal

- 1 pound kielbasa ( pork or turkey), cut into 4 pieces
- 2 tablespoons whole-grain mustard

- 1 pound frozen potato-and-cheddar pierogies (do not thaw)
