  • 1 pound shrimp, cleaned
  • 2 TBS coconut oil
  • 1/2 cup sliced green bell pepper
  • 1/2 cup sliced red bell pepper
  • 1 clove garlic, minced
  • 1/2 tsp guar gum/xanthan gum (thickener)
  • 1/4 cup organic wheat free Tamari sauce (soy sauce)
  • 1/2 cup sugar-free pineapple syrup, (Davinci)
  • 1 TBS vinegar
  • 1 TBS Truvia
  • 1 tsp freshly grated ginger
  • Brown shrimp in oil in a large skillet over medium high heat. Add green bell pepper, red bell pepper and garlic and stir fry for 1 to 2 minutes.
  • In a small bowl, combine thickener and Tamari sauce and mix together; pour mixture into the skillet, along with the pineapple syrup, vinegar, Truvia and ginger. Stir together and bring to a full boil. Serve on top of cauliflower rice. Makes 4 servings.
