Pasta Perfecto

1. Sprinkle chicken with 1/4 teaspoon each salt and pepper 2
- 1/2 pound boneless, skinless chicken breast, cut crosswise into 1/2 inch thick slices
- 1/2 teaspoon salt, divided
- 1/2 teaspoon freshly ground pepper, divided
- 1 tablespoon olive oil
- 1/4 pound shiitake mushrooms, sliced
- 1 cup heavy or whipping cream
- 1/2 cup crumbled Gorgonzola cheese, divided
- 1/3 cup freshly grated Parmesan cheese
- 1/2 pound rigatoni or penne, cooked according to package directions.
- 2 tablespoons chopped fresh parsley
Dilly Salad Dressing

Combine all ingredients in container of electric blender
- 1 medium onion, finely chopped
- 3/4 cup vegetable oil
- 1/2 cup catsup
- 1/4 cup vinegar
- 1/4 cup water
- 1 tsp dillweed dried (1 T fresh)
- 1/2 t salt
- 1/4 t paprika
Caribbean Grilled Scallop Salad

1. Prepare grill to high heat 2
- 12 large seas scallops (about 1 1/2 pounds)
- 2 tsp fish rub, divided (such as Emeril's)
- Cooking spray
- 5 (1/2 inch) slices fresh pineapple
- 4 cups gourmet salad greens or mixed salad greens
- 4 cups torn Boston lettuce (about 2 heads)
- 1/3 cup diced peeled avocado
- 2 tablespoons mango chutney
- 2 tablespoons fresh lime juice
- 2 tsp olive oil
Lamb Meatballs with Tomatoes

Combine lamb, egg, panko, 2 tablespoons yogurt, garlic, salt, cumin, fennel and pepper in a bowl; mix well
- 1 pound group lamb
- 1 egg beaten
- 1/2 cup panko bread crumbs
- 2 tablespoons plain yogurt, plus more for serving
- 1 clove garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon ground cumin
- 1/2 teaspoon fennel seed, crushed
- 1/4 teaspoon freshly ground pepper
- 2 tablespoons butter
- l can (10 ounces) diced tomatoes with green chilies
- 2 strips fresh orange peel, optional
Chunky-Creamy Blue Cheese Dressing

In a medium bowl, whisk together the mayonnaise and yogurt until smooth
- 1 cup mayonnaise
- 1/2 cup low-fat plain yogurt
- 2 tsp white wine vinegar
- 1/4 tsp freshly ground pepper
- 4 oz crumbled Danish blue cheese (about 1 cup)
- 2 medium scallions, minced

Smoked Fish Dip

Put the smoked fish in a medium bowl and add the milk
- 1 1/2 cups crumbled smoked fish (such as swordfish or trout)
- 1/2 cup fat-free or 1% lowfat milk
- 8 ounces light cream cheese, softened
- 1/4 cup finely minced onion
- 1 stalk celery, finely chopped
- 1 T minced fresh parsley
- 3 tsp Indian relish or sweet pickle relish
- 1/2 to 1 tsp lemon juice
- 1 tsp Worcestershire sauce, or to taste
- Cayenne, salt and pepper to taste
Roasted Cherry Tomatoes

In a 10-cup gratin dish or 13x9 glass baking dish, toss together tomatoes, garlic, oil, salt and pepper
- 4 cups cherry tomatoes, halved
- 3 cloves garlic, minced
- 2 tablespoons extra-virgin olive oil
- 1/4 teaspoon each salt and pepper
- 1/3 cup fresh bread crumbs
- 1/2 cup provolone, mozzarella or goat cheese
- 1 teaspoon minced fresh dill

- 1/2 lb shrimp, cooked, peeled, chopped
- 1/4 lb crabmeat, cooked, chopped
- 1/4 lb lobster, cooked, chopped
- 1 lb celery, chopped
- 1 green pepper, seeded, chopped
- 2 hard cooked eggs, chopped
- 1 tablespoon chopped dill pickle
- 1 tablespoon chopped pimento
- 1 tablespoon chopped chives
- 2 cups mayonnaise
- juice of 1 lemon
- 1 tsp tarragon vinegar
- dash of worcestershire sauce
- salt to taste
- white pepper to taste
- celery salt to taste
- paprika to taste
- dry mustard to taste
