Theresa Francavilla Potato Salad

mix all ingredients together
- 1 1/2 lb red potatoes, cooked
- 1 cup sliced radishes
- 1/2 cup green onion
- 1 cup mayonnaise
- 2 tablespoons fresh dill or 1 1/2 dried
- 1 tablespoon salt
- 1/4 tablespoon pepper
- 2 tablespoon dijon mustard
Spicy Shrimp and Crab Bruschetta

Bring clam juice to boil in medium sauce pan
- 1/4 cup bottled clam juice
- 6 oz uncooked large shrimp, peeled, deveined
- 6 green onions, thinly sliced
- 1/3 cup mayonnaise
- 1 T fresh lemon juice
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper
- 4 oz crabmeat, drained
- 1/2 baguette, cut diagonally into 1/3 inch thick slices
- 3 T (about) olive oil
Berry Tossed Salad

In a large bowl, combine the greens, strawberries, kiwi, onion, feta cheese and almonds
- Creamy Raspberry Dressing:
- 1 package (10 oz) ready to serve salad greens
- 1 cup sliced fresh strawberries
- 1 kiwifruit, peeled and sliced
- 1/4 cup chopped red onion
- 1/4 cup crumbled feta cheese
- 2 T slivered almonds
- 1/2 cup mayonnaise
- 2 T plus 2 tsp sugar
- 1 T raspberry vinegar
- 1 T milk
- 2 1/2 tsp poppy seeds
- 1 1/2 tsp seedless raspberry jam
Mushroon-spinach stuffed beef tenderloin

- 1 tablespoon butter or stick margarine
- 3 cups sliced shiitake or button mushrooms caps (about 6 ounces mushrooms)
- 1/2 cup chopped shallots
- 2 tablespoons brandy
- 1 teaspoon olive oil
- 8 cups torn spinach
- 1 garlic clove, minced
- 1 teaspoon salt, divided
- 3/4 teaspoon black pepper, divided
- 1 (4-pound) trimmed beef tenderloin
- 1 teaspoon olive oil
- Cooking spray
Grilled Turkey Burgers

In a bowl, combine the first seven ingredients
- 1 egg lightly beaten
- 2/3 cup dry bread crumbs
- 1/4 cup finely chopped green pepper
- 2 green onions, finely chopped
- 2 tablespoons milk
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1 pound ground turkey
- 2 tablespoons orange marmalade
- 5 hamburger buns, split
- 5 slices Swiss cheese (1/2 ounce each)
- 5 onion slices
- 5 tomato slices
- 1/2 cup shredded lettuce
Cranberry Salad

Finished
- Topping:
- Dissolved 3 small boxes of cranberry jello in 2 cups hot water. Refrigerate until set.
- 4 cups fresh cranberrys
- 2 cups boiling water
- 2 cups white sugar.
- Bring to a boil and boil 20 minutes.
- Cut 1 cup apples; 1 cup celery into small pieces. Add 1 cup chopped pecans.
- Drain a can of crushed pineapple (#2 can). Save the juice. Put the pineapple and apple, celery and pecans into cooked cranberry jello until dissolved again. Place in mould to set.
- 1 cup white sugar
- 2-3 tablespoons flour
- 2 egg yolks.
- Add pineapple juice slowly while cooking in a double boiler and cook uncovered until thick, approx 20 min.
- It thickens more aas it cools
- Chill
- Serve mixed with a 1/2 pint of whipped cream.
- You will only use 1/2 of the pineapple juice mixture with each 1/2 pint whipping cream.

- 1/4 cup sliced onion
- 1 clove garlic
- 1 bay leaf
- 2 celery ribs with leaves
- 1 1/2 T salt
- 2 pounds green shrimp
Cherry-Almond Glazed Pork Roast

- Rolled Pork Roast, boned and tied- 4 pounds or larger
- Cherry Preserves - 12 ounce jar (1 cup)
- 2 Tablespoons light corn syrup
- 1/4 cup red wine vinegar
- 1/4 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoons ground nutmeg
- 1/4 teaspoon ground cloves
- 1/4 cup slivered almonds
Tapas meatballs with Orange Glaze

- 1 egg, beaten
- 1/4 cup ketchup
- 1 small onion, finely chopped
- 1/2 cup soft bread crumbs
