Honey Glazed Grilled Pineapple

Whisk first 4 ingredients in large glass baking dish
- 1/2 cup honey
- 1/4 fresh lime juice
- 1 T grated lime peel
- 1 tsp. orange-flavored water sold at Liquor stores or speciality foods section of supermarket)
- 1 large ripe pineapple
- 1/4 cup minced fresh mint
Goat Cheese Bruschetta

Finish with another drizzle of vinaigrette
- Add 2 tablespoons of balsamic vinegar and 2 tablespoons of chipped fresh herbs, such as dill, parsley or basil to a basic vinaigrette. Drizzle over slices of toasted country or other bread and spread with goat cheese.
Smoked-Salmon pizza with Red Onion and Dill

Preheat oven to 450 degrees Place pizza crust on baking sheet
- 1 - 10 ounce purchased fully baked pizza crust
- 4 ounces cream cheese, room temperature
- 1/4 cup minced red onion
- 1 T chopped fresh dill
- 2 tsp grated lemon peel
- 1 tsp prepared white horseradish
- 4 to 6 ounces thinly sliced smoked salmon
Grilled Herbed Pork Loin

Prepare covered grill for indirect cooking or preheat oven to 375 degrees
- 1/4 cup olive oil
- 2 tablespoons minced garlic
- 1 tablespoon minced fresh rosemary or 1 teaspoon dried
- 1 tablespoon mined fresh thyme or 1 teaspoon dried
- 1 teaspoon salt
- 1 teaspoon freshly ground pepper
- 1/4 teaspoon allspice
- 4 pounds boneless pork loin, tied
- (Can be made ahead. Wrap and refrigerated up to 24 hours)
Mesclun with Berries and Sweet Spiced Almonds

- Sweet Spiced Almonds:
- 5 cups gourmet salad greens
- 1 3/4 cups raspberries (about 1 16oz container)
- 1/4 cup chopped fresh chives
- 3 T champagne or white wine vinegar
- 2 tsp honey
- 1/2 tsp country-style Dijon mustard
- 1/4 tsp salt
- 1/8 tsp freshly ground black pepper
- 1 T canola oil
- 6 T Sweet Spiced Almonds
- 1 cup sliced almonds
- 1/3 cup packed brown sugar
- 1 tsp. ground cinnamon
- 1/2 tsp ground coriander
- 1/2 tsp. ground cumin
- 1 large egg white, lightly beaten

Life of the Party Crab Dip

Blend well. Spoon into over-proof dish, sprinkle with 1/2 cup toasted slivered almonds
- Combine 8 ounce package cream cheese, softened and 1 tablespoon milk; add 6 1/2 ounce can of flaked crabmeat, 2 tablespoons finely chopped onion, 1/2 teaspoon creamstyle horseradish; 1/4 teaspoon salt, dash pepper.
Sausage Mushroom Appetizers

Remove mushroom stems (discard or save for another use); set caps aside
- 48 large fresh mushrooms
- 2 eggs, lightly beaten
- 1 pound bulk pork sausage, cooked and crumbled
- 1 cup (4 ounces) shredded Swiss cheese
- 1/4 cup mayonnaise
- 3 T butter or margarine, melted
- 2 T finely chopped onion
- 2 tsp spicy brown or horseradish mustard
- 1 tsp garlic salt
- 1 tsp Cajun seasoning
- 1 tsp Worcestershire sauce
London Broil Steak

Marinate steak before grilling
- 1 to 1 1/2 pounds thick steak
- 1/2 cup sweet vermouth
- 1/4 cup soy sauce
- 2 Tablespoons Worcestershire sauce
- Ground pepper
- 4 tablespoons Italian dressing
Chef Butch's Roasted Red Pepper Soup Extraordinaire

Ladle and serve
- Saute slowly:
- 4 ounces (1 stick) unsalted butter or margarine
- 4 ounces (8 tablespoons) flour
- 2-3 bay leaves
- 4 sprigs thyme (stems removed)
- 2 large Spanish onions finely chopped
- VERY IMPORTANT - Saute slowly, finished when mixture resembles wet sand - DO NOT BROWN
- Process, blender or emulsifier 1 - 28 ounce jar or can roasted red peppers with half of liquid and 2 tablespoons garlic. Bring to a complete boil. Add above onion mixture.
- Add - 16 ounces Chicken stock
- 2 cups half and half
- Simmer slowly to desired temperature
- Add - 3 tablespoons freshly grated Parmesan cheese before serving.
Herbed Pork and Apples

Combine herbs, salt and pepper; rub over roast
- 1 teaspoon each dried sage, thyme, rosemary and marjoram, crushed
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 pork loin roast with bone (about 6 pounds)
- 4 medium tart apples, cut into 1-inch chunks
- 1 large red onion, cut into 1-inch chunks
- 3 tablespoons brown sugar
- 1 cup apple juice
- 2/3 cup maple syrup
