Combine herbs in heavy large saucepan
- 1/2 cup very finely chopped fresh basil
- 1/2 cup very finely chopped fresh oregano
- 1/2 cup very finely chopped fresh thyme
- 1/2 cup very finely chopped fresh Italian parsley
- 4 cups olive oil

In a large bowl, pour milk over the bread crumbs; let stand for 10 minutes
- 1/2 cup milk
- 1 cup soft bread crumbs
- 1 egg, lightly beaten
- 1 T Worcestershire sauce

1. Preheat the oven to 350 degrees
- 2 tablespoons vegetable oil
- 1 onion, finely diced
- 6 garlic cloves, minced
- 1 celery rib, finely diced
- 1/2 pound ground lamb
- 1/2 cup dry red wine
- 2 tablespoons tomato paste
- 1/4 cup long-grain white rice
- 1 cup water
- 2/3 cup mixed chopped parsley, mint and dill
- Freshly ground black pepper

- 1/2 cup diced fresh tomato
- 1/3 cup picante sauce
- 1/2 tsp ground cumin
- 1/2 tsp chili powder
- 1/4 cup shredded reduced-fat Mexican cheese blend or cheddar cheese
- 1/4 cup minced fresh cilantro or parsley
- 1 T lime juice
- Baked tortilla chips
