- 1/2 cup coil (corn, canola or olive)
- 1 clove garlic, crushed
- 1/4 cup lemon juice
- 1/4 cup soy sauce
- dash of salt
- 1 teaspoons worchestershire sauce
- 2 teaspoons Frenchs mustard
- 1 Tablespoon sugar
- Pepper to taste
Crown Roast of Pork

Roast: Heat oven to 425 degrees
- 1 eight to nine pound crown roast of pork
- salt and freshly ground pepper
- 5 1/2 tablespoons olive oil
- Grated zest of 1 orange
- 4 large cloves garlic, minced
- 2 tablespoons chopped fresh rosemary
- Gravy
- 3/4 cup dry white wine
- 1/2 cup fresh apple cider
- 1 1/2 cups veal or chicken stock, preferably homemade
- 1 tablespoon unsalted butter, room temperature
- 2 tablespoons all purpose flour
- Wild Rice dressing
Golden Chanterelle Soup with Toasted Almonds and Sherry

Melt butter in heavy large pot over medium-high heat
- 2 tablespoons (1/4 stick) butter
- 1 large onion, chopped
- 2 large celery stalks, chopped
- 3 cups thinly sliced fresh chanterelle mushrooms
- 1 cup thinly sliced button mushrooms
- 6 cups (or more) low-salt chicken broth
- 2 medium russet potatoes peeled, cut into 1 inch cubes
- 2 bay leaves
- 1 large fresh thyme sprig
- 1 large fresh Italian parsley sprig
- 1/2 cup whipping cream
- Dry Sherry
- 1/2 cup sliced almonds, toasted

Ruby Red Vinaigrette

1. Bring cranberries and cranberry-orange juice to a boil in a small saucepan
- 1 cup fresh or frozen cranberries
- 1 cup cranberry-orange juice
- 3 T olive oil, divided
- 2 T minced shallots or red onion
- 2 T red wine vinegar
- 2 T honey
- 3/4 tsp salt
- 1/2 tsp freshly ground pepper
- Salad greens or fruit

Put in glass pie dish and cover with whatever your favorite cheese mixture is
- 1 pound crabmeat (Costco in special food section)
- Mix with Hellman's real Mayo until you get the consistancy you like. Add salt, pepper, garlic powder and onion powder. (Or use Old Bay seasoning or Paula Dean's seasoning)

Preheat over to 475 degrees Place tenderloin on a broiler pan coated with cooking spray
- Herb-Garlic Cream:
- 1 (1 1/5 pound) beef tenderloin, trimmed
- Cooking spray
- 1 tsp kosher salt
- 1/2 tsp freshly ground black pepper
- 30 (1/4 inch thick) slices diagonally cut French bread baguette, toasted
- 10 T Herb-Garlic Cream
- 30 baby spinach leaves
- 5 T (1 1/4 oz) crumbled Gorgonzola cheese
- 2/3 cup fat free sour cream
- 2 T minced fresh chives
- 2 T low-fat mayonnaise
- 1 1/2 T chopped fresh thyme
- 1 1/2 tsp Worcestershire sauce
- 1/4 tsp freshly ground black pepper
- 1 garlic clove, minced
- Combine all ingredients in a small bowl; cover and chill. Serving 1 teaspoon.
Parmesan Potato Balls

Place potatoes in a large saucepan and cover with water
- 3 large potatoes, peeled and cubed
- 2 ounces cream cheese, softened
- 2 tablespoons milk
- 1 tablespoon butter, softened
- 1/4 cup grated Parmesan cheese
- 1 tablespoon chopped green onion
- 2 1/2 teaspoons onion soup mix
- 1/2 teaspoon salt
- 1/8 teaspoon hot pepper sauce
- dash pepper
- 1 egg, beaten
- 1 1/2 cups crushed cornflakes
