Wrapped Olives - Pamela Behrens

Mix ingredients and make a wrap around olives till covered
- 1/4 cup butter
- 1/4 pound sharp grated sharp cheddar cheese
- 3/4 cup flour (enough to make it firm enough to wrap around olives) Add a little olive oil if dry
- Palmetto olives (large)
- Sprinkle of cayenne pepper (to taste, some like it hot)
Vegetable Medley

Mix green onions, Parmesan cheese, basil, oregano and garlic powder in a small bowl until blended
- 6 medium-size green onions, sliced thin (3/4 cup)
- 1/2 cup grated Parmesan cheese
- 3/4 teaspoon each dried basil and oregano leaves, crumbled
- 1/4 teaspoon garlic powder
- 24 medium-size fresh asparagus spears (about 1 pound) trimmed
- 3 medium-size ripe tomatoes (about 1 pound) quartered
- 2 tablespoons water
Mixed Leaf Salad with Roasted Walnuts and Roquefort

1. Preheat the oven to 275 degrees
- 1/2 C coarsely chopped walnuts
- 1 T red wine vinegar
- 1 T Dijon-style mustard
- 1/8 tsp salt
- 3 T extra-virgin olive oil
- 2 tsp minced fresh parsley
- Freshly ground pepper
- 4 cups mixed salad greens, such as arugula, radicchio, chicory and red leaf lettuce
- 1/3 C crumbled Roquefort cheese
Parmesan-Blue Cheese Toasts with Green Onion

Combine mayonnaise, garlic, ground pepper, and cayenne pepper in medium bowl and whisk to blend
- 1 cup mayonnaise
- 2 large garlic cloves, minced
- 1/2 tsp ground black pepper
- 1/8 tsp cayenne pepper
- 1 1/2 cups freshly grated Parmesan cheese (about 5 ounces)
- 3/4 cup finely crumbled blue cheese (about 3 ounces)
- 28 1/3 " thick diagonal bread slices cut from 2 sourdough baguettes
- Olive Oil
- 3/4 cup finely chopped green onions
Oysters Chesapeake

1. Preheat broiler (Cook on the bottom broiler rack, or breadcrumbs will burn before the oysters are cooked though
- 1 T minced chives
- 2 T reduced-fat mayonnaise
- 2 T reduced-fat sour cream
- 1/8 tsp salt
- 1/8 tsp freshly ground black pepper
- 2 bacon slices cooked and crumbled (drained)
- 1 6 1/2 ounce can lump crabmeat, undrained
- 1 (1-ounce) slice white bread
- 1 tsp butter, melted
- 12 shucked oysters
- Lemon wedges (optional)
- Fresh minced chives (optional)
Onion-Poppy Seed Dressing

In a blender, combine the vinegar, sugar, onion, and mustard
- 1/3 cup cider vinegar
- 1/2 cup sugar
- 1/2 large sweet onion, cut into wedges
- 1 tsp. ground mustard
- 1 cup vegetable oil
- 1 tsp poppy seeds

In a large bowl, combine 1 cup cheese, water and taco seasoning
- 2 cups (8 oz) shredded cheddar cheese, divided.
- 2 T water
- 2 to 4 T taco seasoning
- 1/2 lb. ground beef
- 2 tubes (8 ounces each) refrigerated crescent rolls
- 1/2 medium head iceberg lettuce, shredded
- 1 medium tomato, chopped
- 4 green onion, sliced
- 1/2 cup sliced ripe olives
- 2 jalapeno peppers, sliced
- Sour cream and salsa, optional

1. In a large bowl, combine bread and milk
- 1 1/2 cups torn crustless Italian bread
- 1/4 cup of milk
- 1 1/2 pounds ground beef chuck
- 2 eggs
- 1 1/2 teaspoon of salt
- 1/2 teaspoon pepper
- 1/4 cup olive oil
- 1/2 cup chopped onion
- 1 28 ounce can Italian crushed tomatoes in puree
- 1/2 cup dry red wine
- 1/2 cup of water
- 1 pound of spaghetti or other pasta
- 1 teaspoon oregano

- 2 cups buttermilk
- 2 cups mayonnaise
- 1 T onion powder
- 1 T dried parsley flakes
- 1-1/2 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp celery salt
- 1/4 tsp pepper
Shellfish Stock

1. Preheat oven to 450 degrees 2
- 2 1/2 pounds lobster shells (about 4 small lobsters) (can use crab shells or a combination or shrimp shells.
- 2 cups coarsely chopped celery
- 2 cups coarsely chopped fennel bulb
- 1 cup coarsely chopped carrot
- 2 tablespoons no-salt-added tomato paste
- 2 medium onions, peeled and halved (abut 1 pound)
- 5 quarts water
