1. Bring 4 1/2 cups of water and bay leaves to a simmer in a large skillet
- 4 1/2 cups water
- 4 bay leaves
- 1 1/2 pounds halibut fillets or other firm white fish, skinned
- 8 slices bacon, uncooked
- 3 1/2 cups cubed peeled baking potato
- 1 1/2 cups chopped onion (about 1 large)
- 1/2 cup coarsely chopped carrot (about 1 medium)
- 1 1/2 teaspoons dried thyme
- 1 teaspoon salt, divided
- 3/4 teaspoon freshly ground black pepper, divided
- 4 cups 2% reduced fat milk
- 1 tablespoon butter, cut into small pieces
Philadelphia Cream Cheese Sauce - Maybelle Kurzweil

Cook over low heat 15 minutes
- Tish Sauce:
- 1/2 cup chopped onion
- 2 cloves garlic
- 1 1/2 cup ketchup
- 2 T vinegar
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 T prepared mustard (not dry)
- 2 T Worcestershire Sauce or A-1 Sauce
- 1/4 cup lemon juice

Creamy Rice with Lemon, Herbs and Parmesan

Bring 4 quarts water to boil in large pot over high heat
- 4 quarts water
- 2 cups arborio rice or medium-grain rice (12 to 13 ounces)
- 1 cup chopped onion
- 1/2 cup chopped fresh parsley
- 6 tablespoons (3/4 stick) butter, cut into small pieces, room temperature
- 1/4 cup chopped fresh basil
- 1 tablespoon fresh lemon juice
- 1 teaspoon grated lemon peel
- 1 cup (packed) plus 2 tablespoons grated Parmesan cheese (about 3 ounces)
- Fresh basil springs
Smoked Turkey Reuben Sandwich

On two bread slices, spread equal amounts of Thousand Island dressing; top with coleslaw, turkey and cheese
- 4 slices marbled rye bread
- 2 tablespoons Thousand Island salad dressing
- 1/2 cup creamy-style coleslaw with celery seeds
- 4 ounces thinly sliced mesquite smoke turkey breast
- 4 slices (1 ounce each) Swiss Cheese
- 2 tablespoons butter

- Wrap in plastic and set aside
- In bowl mix can of chick peas, juice of half lemon, 1 T olive oil, garlic, parsley, 1 tsp salt

- 1 large butternut squash, split and deseeded
- 1 golden delicious apple, peeled and cored
- 3 tablespoons chicken stock
- 1/2 cup heavy cream
- 2 1/2 cups water, preferably filtered
- 1 teaspoon vanilla extract
- 1 teaspoon maple flavoring
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground Madagascar clove
- 1/2 teaspoon ground nutmeg
- kosher salt, pinch ground thyme, pinch corn starch
Shrimp Toast Puffs with Two Sauces

- Soy-Garlic Sauce:
- 1 pound peeled and deveined medium shrimp
- 2 bacon slices, diced
- 1/3 cup finely chopped green onions
- 1 1/2 tsp bottled ground fresh ginger (such as Spice World)
- 1 cup all-purpose flour (about 4 1/2 ounces)
- 1 cup water
- 3 T butter
- 1/2 tsp sugar
- 2 large egg whites
- 1 large egg
- Cooking Spray
- 1/4 cup low-sodium soy sauce
- 2 T finely chopped green onion tops
- 2 T seasoned rice vinegar
- 1 tsp hot chili sauce with garlic (such as KA-ME)
- 1/2 tsp dark sesame oil
- Sweet Chili Sauce:
- 6 T sweet chili garlic sauce (such as Taste of Asia)
- 4 tsp seasoned rice vinegar
Summer Fruit with Praline Fondue

Transfer butterscotch to bowl
- Beat together in medium bowl, then transfer to small serving bowl:
- 1/2 cup creme fraiche
- 1/2 tablespoon dark brown sugar
- Place in another small serving bowl:
- 1/2 cup chopped toasted pecans
- Place creme fraiche and nuts on platter and surround with
- Assorted fresh fruit (such as grapes, berries, cherries, and plum and peach wedges)
- Melt in medium nonstick skillet over medium heat:
- 6 tablespoons unsalted butter
- Increase heat to medium-high and add:
- 1 cup (packed) dark brown sugar
- 2 tablespoons water
- Stir sugar and water 1 minute (mixture will bubble vigorously) then stir in:
- 2 1/2 tablespoons dark rum
- 1 teaspoon vanilla extract
