Mushroom and Barley Risotto

1. Combine 2 cups boiling water and porcini mushrooms; let stand 20 minutes
- 2 cups boiling water
- 1/2 ounce dried porcini mushrooms
- 2 T olive oil
- 1 1/2 cups chopped onion
- 1 (8 ounce) package cremini mushrooms, sliced
- 5 garlic cloves, minced
- 2 cups uncooked pearl barley
- 3 T brandy
- 1 3/4 cups water
- 1 cup fat-free, lower-sodium chicken broth
- 2 ounces fresh pecorino Romano cheese, divided
- 1/2 tsp kosher salt
- 1/4 cup chopped fresh flat-leaf parsley
GreeK Lamb Stir-Fry

Partially freeze lamb. Trim fat
- 1/2 pound lean boneless lamb
- 1 tablespoon olive oil
- 1 tablespoon lemon juice or balsamic vinegar
- 1/2 teaspoon dried rosemary, crushed
- 1/2 teaspoon dried oregano, crushed
- 1/4 teaspoon pepper
- 1 to 2 tablespoon cooking oil
- 1 clove garlic, minced

Garlic-Lime Shrimp

- 1/4 cup (1/2 stick) butter
- 2 T fresh lemon juice
- 2 1/2 tsp Worcestershire sauce
- 2 garlic cloves, minced
- 1 tsp sugar
- 3/4 tsp grated lime peel
- Pinch of cayenne pepper
- 10 large uncooked shrimp in shells
- 2 T copped fresh parsley

In a bowl, combine the sauerkraut, corned beef, sour cream, onion and garlic
- 1 jar (16 ounces) sauerkraut, rinsed and well drained
- 1-1/4 cups chopped cooked corned beef (about 1 pound)
- 1 cup (8 ounces) sour cream
- 1 small onion, chopped
- 1 garlic clove, minced
- 1 cup (4 ounces) shredded Swiss cheese
- 2 slices rye bread, cubed
- 2 tablespoons butter or margarine, melted

- 1 cup no salt added tomato sauce
- 1/4 teaspoon hot sauce, or to taste
