Spinach Salad with Chutney Dressing

Toss all ingredients. Serve with freshly group pepper, if desired
- Chutney Dressing:
- 1 pound spinach, torn into bite size pieces (about 8 cups)
- 4 ounces mushrooms sliced (about 1 1/2 cups)
- 1 cup bean sprouts
- 1 cup unseasoned croutons
- 1/4 cup crumbled blue cheese
- 6 red onion slices, separated into rings
- 1/3 cup vegetable oil
- 1/4 cup chutney
- 2 tablespoons vinegar
- 1/2 tsp onion powder
- Shake all ingredients in tightly covered container.
Baked Spinach with Three Cheeses

Preheat oven to 350 degrees
- 1 cup finely chopped onion
- 1/2 cup crumbled feta cheese
- 1/2 cup grated Edam cheese
- 1/4 cup crumbled Roquefort cheese
- 2 tablespoons chopped fresh dill
- 2 tablespoons fresh breadcrumbs
- 1 large egg yolk.
- 3 tablespoons olive oil
- 2 10 ounce packages read to use spinach, coarsely chopped
Berry Slaw

In a large bowl, combine the vinegar, apple juice, sugar, salt and pepper; add cabbage
- 1/4 cup cider vinegar
- 1/4 cup unsweetened apple or cranberry juice
- 1 tsp sugar
- 1/2 tsp salt
- 1/4 tsp white pepper
- 6 cups shredded cabbage
- 1 1/2 cups sliced fresh strawberries
- 1/2 cup dried cranberries
Ham, Cheese-N-Egg Cups

1. Place rack in middle of oven and preheat oven to 400 degrees
- 12 (1 ounce) slices reduced-sodium Virginia or Black Forest ham
- 3 (1 ounce) slices 100% whole grin or white bread, each torn into 4 pieces
- 1 1/2 cups (12 fluid ounces) fat free egg substitute
- 3 cups Cabot 50% Reduced Fat Cheddar Cheese (12 ounces)
- 1/4 teaspoon ground black pepper, or to taste
- 3 tablespoons chopped fresh chives
Blueberry Salsa Salad

Peel and section orange then cut sections into small pieces; place in large bowl
- 1 large fresh orange
- 2 cups fresh blueberries
- 2 medium sized green or red eating apples, diced
- 1/2 cup chopped sweet onion
- 2 tablespoons chopped cilantro
- 1/3 cup Red Wine vinegar
- 3 tablespoons apple juice
- 2 tablespoons granulated sugar
- 1/4 tsp salt
- 2 bags (5 oz each) spring mix
- (salad blend of tender baby greens)
- 1 container (16 oz low fat cottage cheese or 1 container (4 oz) crumbled Gorgonzola cheese.
- Cracker black pepper for garnish (optional)
Turkey Casserole - Eva Godfrey

Mix together. Save 1/2 noodles for topping
- 2 cans Campbell's mushroom soup
- 2 cups turkey
- 1 cup onions
- 1 cup celery
- 1 cup mushrooms, save liquid
- 1 can chow mein noodles
- 1/2 pound slivered almonds
Cuban Black Beans

- 2 cups dried black beans, rinsed
- 1 bay leaf
- 3 medium green peppers, chopped
- 2 medium onions, chopped
- 1/2 cup olive oil
- 6 garlic cloves, minced
- 1 can (15oz) tomato puree
- 1/2 cup sherry or chicken broth
- 2 Tbsp. sugar
- 3/4 tsp. salt
Porcupine Meatballs

In a bowl, combine the first seven ingredients
- 1/2 cup uncooked long grain rice
- 1/2 cup water
- 1/3 cup chopped onion
- 1 tsp salt
- 1/2 tsp celery salt
- 1/3 tsp pepper
- 1/8 tsp garlic powder
- 1 pound ground beef
- 2 T vegetable oil
- 1 can (15 ounces) tomato sauce
- 1 cup water
- 2 T brown sugar
- 2 tsp Worcestershire sauce

- 1/2 cup dry breadcrumbs
- 1/2 cup (2 oz) finely shredded fresh Parmesan cheese

- 1/4 cup coarsely shredded carrot
- 1/4 cup coarsely shredded zucchini
- 1/4 cup chopped fresh parsley
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 large egg white
- 2 garlic cloves, crushed

Hash Brown Quiche
