  • Chutney Dressing:
  • 1 pound spinach, torn into bite size pieces (about 8 cups)
  • 4 ounces mushrooms sliced (about 1 1/2 cups)
  • 1 cup bean sprouts
  • 1 cup unseasoned croutons
  • 1/4 cup crumbled blue cheese
  • 6 red onion slices, separated into rings
  • 1/3 cup vegetable oil
  • 1/4 cup chutney
  • 2 tablespoons vinegar
  • 1/2 tsp onion powder
  • Shake all ingredients in tightly covered container.
