U.S. Senate Bean Soup

Place beans and enough water to cover in a saucepan; bring to a boil and boil for 2 minutes
- 1 pound dried great northern beans
- 1 meaty ham bone or 2 smoked ham hocks
- 3 medium onions, chopped
- 3 garlic cloves, minced
- 3 celery ribs, chopped
- 1/4 cup chopped fresh parsley
- 1 cup mashed potatoes or 1/3 cup instant potato flakes
- Salt and pepper to taste
- Parsley and chives for garnish
Guilt Free Onions Rings

Preheat oven to 450 degrees
- 1/4 cup fine dry bread crumbs
- 1/4 cup finely crushed cornflakes
- 1/8 teaspoon salt
- 1/8 teaspoon cayenne pepper, optional
- 1 to 2 medium yellow onions, sliced 1/4 inch thick and separated into rings
- 2 slightly beaten egg whites

- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 1 large carrot, chopped
- 1 celery stalk with leaves, chopped
- 1 carcass with skin from one 12-15 pound turkey, meat removed and reserved, carcass broken into pieces
- 4 quarts cold water
- 4 fresh Italian parsley springs
- 1/2 teaspoon dried thyme
- 1/4 teaspoon whole black peppercorns
