- 4-5 cups thinly sliced potatoes (about 6 8 medium potatoes)
- 4 Tbsp. butter
- 1/4 cup all-purpose flour
- 1 tsp. dried parsley flakes

- 1/2 tsp. pepper
- 3 cups milk
- 1/4 cup finely chopped onion
- 1/2 lb. Italian sausage, casing removed, cooked, and crumbled
- 3/4 cup (packed) grated extra-sharp cheddar cheese (about 4 oz.)

- 4 Tbsp. shallots, minced
- 6 cloves garlic, minced
- 1 cup leeks, minced
- 1/2 cup celery, minced
- 1/2 cup white wine
- 4 tsp. Worcestershire sauce
- 4 tsp. Tabasco sauce
- 2 tsp. fresh thyme, chopped
- 2/3 cup sherry
- 3 cups water
- 3 tsp. lobster bullion (or chicken stock, if lobster bullion isn't available)
- 1/2 cup tomato paste
- 2 bay leaves
- 4 cups heavy cream
- 2 cups lobster meat, cooked and chopped

- 3 medium zucchini, stems removed
- 2 Tbsp olive oil, plus extra for brushing zucchini
- 4 oz orzo pasta, cooked, drained, and cooled
- 1 plum tomato, seeded and finely diced
- 2 canned artichoke hearts, chopped
- 1/3 cup canned sliced black olives, chopped
- 2/3 cup canned chickpeas, drained and rinsed
- 3 Tbsp Parmesan cheese, grated
- 1 Tbsp white vinegar
- 1 tsp salt
- 1/4 tsp ground black pepper
- 1 clove garlic, minced
- 1/3 cup red onion, finely diced

- 2 cups chicken or rich vegetable stock
- 1-1/2 tsp. instant espresso powder
- 1 tsp. whiskey (optional)
- 1/2 tsp. balsamic vinegar
- 1 Tbsp. chopped fresh herbs (such as parsley, chives, or thyme)

- Tots:
- 2 medium-size sweet potatoes, peeled and cut in large pieces
- 1/4 cup flour, plus additional for rolling
- 1 tsp cornstarch
- 1 tsp chili powder
- 2 cups panko breadcrumbs
- 2 egg whites, beaten
