Corned Beef Sliders with Cabbage Slaw and Guinness Mustard

Nowadays, you’d be hard-pressed to find a restaurant that doesn’t offer sliders
- SLIDERS:
- 12 slider sized potato bread rolls
- 2 ounces sliced corned beef
- 2 teaspoons Guinness mustard
- 2 tablespoons coleslaw
- CABBAGE SLAW:
- 1 (16 ounce) bag coleslaw mix
- 2 tablespoon onion, diced
- 2/3 cup mayonnaise
- 3 tablespoon buttermilk
- 1/3 cup white sugar
- 1 tablespoon white vinegar
- 1 tablespoon lemon juice
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/2 teaspoon poppy seeds
- GUINESS MUSTARD:
- 1/2 cup whole grain Dijon mustard
- 3 tablespoons regular Dijon mustard
- 3 tablespoons Irish stout beer (like Guinness)
- 1 tablespoon shallot, minced
- 11/2 teaspoons light brown sugar
- Pinch of ground nutmeg
- Pinch of ground allspice
Crescent Hot Cross Buns

Heat the oven to 350º F. Unroll dough and separate into 8 triangles
- Buns:
- 2 8-oz. cans of refrigerated crescent-shaped dinner rolls
- 1/2 cup golden raisins
- 1/2 tsp. cinnamon & 1/2 tsp. sugar, combined
- Icing:
- 1/2 cup powdered sugar
- 2 – 3 tsp. milk

Apple Cinnamon Roll Bread Pudding

- 3 cups half-and-half
- 4 large eggs
- 1/2 cup granulated sugar
- 1 Tbsp vanilla extract
- 3/4 tsp ground cinnamon
- 1/2 tsp salt
- 1-1/2 lbs store-bought, already baked cinnamon rolls, cut into 2" pieces
- 2 Granny Smith apples, peeled, cored, and chopped into 1" pieces
- 4 oz cream cheese, cut into 1/2" pieces
- Maple syrup, for drizzling

This is a very versatile recipe
- 1 Tbsp. olive oil
- 1/2 cup carrots, chopped
- 1/2 cup celery, chopped
- 1/2 cup onion, chopped
- 3 4 cloves garlic, minced
- 6 cups vegetable broth
- 3 cups in total of your favorite in-season vegetables such as green beans, zucchini, yellow squash, red bell peppers, beans, potatoes and/or corn, chopped
- 4 cups peeled, seeded, and chopped tomatoes or 2 15-oz. cans of crushed tomatoes
- 2 Tbsp. fresh herbs of your choice such as basil, oregano, and/or parsley, chopped
- Salt and pepper to taste
- Freshly grated Parmesan cheese to garnish
