1. Prepare a baking sheet with paper towels, set aside
- 4 4 4 boneless chicken breasts, butterflied, pounded thinly
- 2 2 2 egg whites
- 1/2 1/2 1/2 cup flour
- 1 1 1 cup panko crumbs
- 1 zest of 1 lemon
- 1/2 1/2 1/2 tsp. dried thyme
- kosher salt
- fresh cracked black pepper
- olive oil, for frying
- lemon wedges for garnish
Grilled Buttermilk Chicken

1. Combine soy milk and vinegar allow to sit for 20 minutes
- 2 cups buttermilk (2 cups soy milk+1/4 cup vinegar)
- 6 garlic cloves
- 1/4 cup fresh rosemary or thyme
- Coarse salt and freshly ground pepper
- 6 pieces chicken
Spicy Red Potatoes

- 1 tsp. garlic powder

- 1 tsp. wheat germ
- 1/2 tsp. flax seed
