- 1 16 ounce can libbys pumpkin,not pie filling
Potato Soup

1. Sauté onion in margarine until tender
- 1 large onion, chopped
- 3 tbsp. margarine
- 2 1/2 tbsp. flour
- 6 cups water
- 4 small potatoes, cubed
- 1 tsp. salt
- 1/4 tsp. garlic
- 1/4 tsp. paprika
- 1/8 tsp. black pepper
- 2 tbsp. fresh parsley, chopped
Chickpea Salad

1. Mix everything together
- 1 can chickpeas,drained
- 4 persian cucumbers,diced
- 3 tomatoes, diced
- 1 avocado,diced
- 1/2 tsp. parsley
- squeeze of lemon
- salt and pepper
- 1 tbsp. olive oil
Portobello Tuna Melts

1.Gently clean the mushrooms with a dry paper towel and remove the stem and gills
- 4 portobello mushroom caps
- 2 tbsp olive oil
- 2 6oz. cans tuna, packed in water, drained
- 1/3 cup mayonnaise
- 2 tbsp pickle relish
- 1 tsp mustard
- 1 tsp fresh squeezed lemon juice
- salt and pepper, to taste
- 1 tomato, sliced
- 1 red onion, peeled and sliced
- 2 slices Natural & Kosher chipotle meunster cheese
Salmon Loaf with Dill Sauce

1 roll out dough 2 combine rest of ingredients, spread on dough 3 roll up jelly roll style, place on parchment pape
- 1/2 pckg puff pastry dough
- 2 pieces fresh salmon,baked,and flaked
- 3/4 cup bread crumbs
- 3/4 cup mayonnaise
- 1/2 cup chopped onions
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 beaten egg
- DILL SAUCE
- 1 cucumber diced
- 3/4 cup mayonnaise
- 3 tablespoons chopped onion
- 1 tablespoon chopped fresh dill, or 1 teaspoon dried dill
- 1/2 cup water
Cauliflower-Spinach Pattys

1. Spray a baking sheet with pam
- 1 pound cauliflower florets microwaved until soft,water squeezed out (abt 5 minutes)
- 1/2 cup spinach,microwaved,water squeezed out
- 1/2 cup shredded cheese
- 1/4 cup bread crumbs
- 1 egg plus 1 egg white
- 1 frozen garlic clove
- salt to taste
Lindzer Cookies

- 5-6 cups flour
- 1 cup sugar
- 2 eggs
- 3 1/2 sticks margarine
- 1 tbsp. vanilla
- PASTE:
- 1 stick margarine
- 2 tbsp. vanilla sugar
- 1/2 cup confectioners sugar
- jam to decorate
Apple Blueberry Cobler

- 12 oz fresh or frozen blueberries
- 3 apples diced
- 2/3 cup sugar
- 2 eggs
- 1/2 cup oil
- 1/2 tsp. baking powder

- 1 tsp. vanilla
- 1 cup flour
- 2/3 cup sugar
- 6 tbsp. margarine
- 1/2 tsp. cinnamon
Purple Cabbage Salad

- 1 head purple cabbage
- 6 scallions, sliced
- 6 tbsp. olive oil
- 4 tbsp. vinegar

- 2 cups flour
- 1 cup mashed banana
- 1 tsp. baking soda
- 1 tsp. salt
- 1 tsp. vanilla
- 1 1/2 cups sugar
- 2 eggs, separated
- 1 tsp. baking powder
- 1/2 cup hot water
