Velveeta Cheesy Chicken Skillet

- 1 cup milk
- 1 cup water
- 1 cup broccoli florets
- 1 carrot, sliced
Chilled Cantaloupe Soup

1. Peel, seed, and cube the cantaloupe
- 2 cantaloupe - peeled, seeded and cubed
- 2 cups orange juice
- 1 tablespoon fresh lime juice

Rhubarb Cake

Mix like a pie crust, flour, baking powder, salt, sugar and butter

- 1/2 cup flour
- 1 t. baking powder
- 1/2 t. salt
- 2 T. sugar
- 1 stick of butter
- 2 T. milk
- 1 egg
- 3 cups Rhubarb (uncooked)
- 1 small pkg jello (cherry or strawberry)
- 1 cup sugar
- 1/2 cup flour
- 1/4 stick butter
Hot Pepper Jelly

Place vinegar and peppers in a blender; cover and puree
- 1-1/2 cups white vinegar
- 1 medium sweet red pepper, cut into wedges
- 2/3 cup chopped habanero peppers
- 6 cups sugar, divided
- 2 pouches (3 ounces each) liquid fruit pectin
- 1 teaspoon red food coloring, optional
- Cream cheese and crackers
Mexican-Style Brown Rice Casserole

- 4 cup(s) cooked brown rice
- 1 1/4 cup(s) salsa
- 1 tsp Durkee Ground Cumin Seed, or other brand
- 15 oz canned refried beans
- 10 oz frozen corn kernels, thawed
- 4 oz canned green chili peppers, mild, diced
- 1 Tbsp chili powder
- 10 oz chopped frozen spinach, or collard greens, thawed and set to drain in a strainer over a bowl
- 3/4 cup(s) low-fat shredded cheddar cheese, divided
- 2 Tbsp cilantro, fresh, chopped (optional; for garnish)
Creamy Shell Pasta Salad

1. Cook pasta according to package directions; drain and rinse in cold water
- DRESSING:
- 1 cup small uncooked seashell pasta
- 3/4 cup fresh broccoli florets
- 1 small carrot, thinly sliced
- 1/3 cup cubed American cheese
- 1/4 cup chopped cucumber
- 1/4 cup diced celery
- 1/4 cup sunflower kernels
- 1 hard-cooked egg, peeled and chopped
- 1/2 cup mayonnaise
- 1/4 cup prepared Ranch salad dressing
- 3 tablespoons milk
- 2 tablespoons red wine vinegar
- 1 tablespoon dried minced onion
- 1/2 teaspoon seasoned salt
- 1/4 teaspoon garlic powder
- 1/4 teaspoon dried parsley flakes
- 1/4 teaspoon pepper
- 1/4 teaspoon prepared mustard
Rhubarb Pie

Mix all together. Put in uncooked pie crust bake till done at 325-350

- 1 1/2 cup sugar
- 2 heaping tblsp flour
- 3 eggs
