- 1 cup grits, either old-fashioned or quick cooking (but not instant)
- 4 cups water
- 4 tablespoons butter
- 1 bunch scallions, chopped
- 2 cloves garlic, minced
- 1/4 teaspoon crushed red pepper
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper, to taste
- 1 1/2 cups coarsely grated cheddar
- 1/2 cup crumbled crispy bacon
- 1/2 cup egg whites, from 4 eggs

- 1 pound gemelli pasta or other short cut pasta
- 1 tablespoon extra-virgin olive oil
- 1/2 pound bacon, chopped
- 2 onions, quartered and thinly sliced

- 1 cup chicken stock

1. Adjust oven rack to middle position and heat oven to 425 degrees
- 16 tablespoons unsalted butter (2 sticks), frozen whole
- 1 1/2 cups fresh raspberries (you can also use frozen, but do not defrost)
- 1/2 cup whole milk
- 1/2 cup sour cream
- 2 cups unbleached all-purpose flour, plus additional for work surface
- 1/2 cup sugar
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon table salt
- zest of one lemon
- 1/4 cup of white chocolate chips
- vanilla sugar to sprinkle on top
