Lenny's Meat Loaf

Melt the butter in a heavy skillet, then add the onion, scallion, carrots, celery, bell peppers and garlic
- 3 Tbl. butter
- 3/4 cup each finely chopped onion and scallion
- 1/2 cup finely chopped carrots
- 1/4 cup finely chopped celery
- 1/4 cup chopped green bell pepper
- 2 tsp. minced garlic
- 3 eggs, well beaten
- 1/2 cup ketchup
- 1/2 cup half and half
- 1 tsp. ground cumin
- 1/2 ground nutmeg
- 1/4 tsp. cayenne pepper
- Salt and pepper
- 2 lb. lean ground beef chuck
- 12 oz. ground sausage
- 3/4 cup fine fresh bread crumbs, toasted

In a medium bowl, combine tomatoes, red wine vinegar, ketchup and brown sugar
- 1 can diced tomatoes
- 1/3 cup red wine vinegar
- 1/3 cup ketchup
- 2-3 Tbl. packed brown sugar
- 1 1/2 lbs. ground beef
- 1 cup medium yellow onion, chopped
- 1 cup stalks celery, chopped
- 1/2 cup green bell pepper, chopped
- 3 large cloves garlic, chopped
- 1-2 Tbl. chili powder
- 1 tsp. dried oregano
- 1/2 tsp. salt

- 1 Tbl. extra virgin olive oil, plus more for brushing
- 1 small red onion, sliced
- 1 1 1/2-inch piece ginger, peeled and grated
- Pinch of cayenne pepper
- Juice of 1/2 lime
- 1 1/4 pounds (about 5 medium) tomatoes, chopped
- 1/4 cup chopped fresh cilantro
- 4 to 6 pieces naan bread or pita
- Kosher salt

- 1 Tbl. olive oil
- 1 medium onion, sliced
- 3 stalks celery, chopped
- 2 cups roughly chopped carrots
- 1 cup quinoa
- 1 qt. fat-free low-sodium chicken broth
- Kosher salt and freshly black pepper
- 2 cups chopped broccoli florets
- 2 1/2 cups shredded rotisserie chicken (white meat only) skin removed
- 2 Tbl. low-fat sour cream

- 1 lb. spaghetti
- 1 bulb fennel
- 6 ribs celery with leafy tops
- 1 cup flat-leaf parsley leaves, coarsely chopped
- 1 lemon, juiced
- 1/4 cup olive oil, plus more for drizzling
- 1 cup fresh sheep's or cow's milk ricotta cheese
- 1 cup grated pecorino-romano cheese
- 1/2 cup grated parmigiano-reggiano cheese
