Ginger-Peanut Chicken Salad Wraps

Heat oil in large nonstick skillet over medium high heat
- 1 tsp. olive oil
- 6 (4 oz.) skinless, boned chicken breast halves
- 1 cup cucumber, chopped, seeded and peeled
- 3/4 cup chopped red bell pepper
- 1 1/2 TBL sugar
- 1 tsp. minced, peeled fresh ginger
- 3 TBL fresh lime juice
- 1 TBL low-sodium soy sauce
- 1/4 tsp. salt
- 1 garlic clove, crushed
- 1/4 cup creamy peanut butter
- 2 TBL water
- 3 TBL chopped fresh cilantro
- 8 (8 in) fat free flour tortillas
- 4 cups chopped romaine lettuce
Brisket Tacos with Red Cabbage

Preheat oven to 325 degrees
- 2 heads garlic, unpeeled and halved crosswise, plus 6 cloves garlic
- 2 Tbl. olive oil
- Kosher salt
- 4 to 4 1/2 pounds brisket
- Freshly ground pepper
- 1 Tbl. smoked paprika
- 1 Tbl. chili powder
- 3 Tbl. canola oil
- 3 large red onions, halved and thinly sliced
- 1/4 cup brown sugar
- 2 Tbl. apple cider vinegar
- 1 cup dry red wine
- 2 cups beef stock
- 2 bay leaves
- 16 to 20 small flour tortillas
- Red cabbage slaw, for topping
Skinny Macaroni Salad

Combine all ingredients except pasta in glass bowl
- 1 cup peeled & chopped tomatoes
- 2 tsp. balsamic vinegar
- 1/4 cup minced red onion
- 2 tsp. olive oil
- 2 Tbl. minced fresh basil
- 1/8 tsp. ground black pepper
- 2 cloves garlic, minced
- 2 cups cooked penne or elbow pasta
Zesy Pineapple Salsa

- 1 can (20 oz.) Pineapple Tidbits or Chunks
- 1/2 cup red bell peppers
- 1/4 cup green bell peppers
- 1/4 cup green onions
- 2 tsp. cilantro
- 2 tsp. jalapeno chiles
- 1 tsp. grated lime peel

- Topping:
- 1 1/2 lbs. each red and green grapes
- 1 cup sour cream
- 1 pkg. (8 ounces) cream cheese, softened
- 1/2 cup sugar
- 1 tsp. vanilla
- 2/3 cup packed brown sugar
- 2/3 cup chopped pecans
French Onion Burgers

- 2 Tbl. olive oil
- 1 large onion, halved and thinly sliced
- 1/2 tsp. sugar
- Kosher salt
- 1/2 cup low-sodium chicken broth
- 2 Tbl. plus 1 tsp. Worcestershire sauce
- 1 1/2 lbs. ground beef
- 1 tsp. onion powder
- 4 brioche or hamburger buns, split
- 2 cups shredded gruyere cheese (about 6 ounces)
