Low Fat Etouffee

Spray dutch oven with PAM and saute vegetables until wilted
- 1 onion, chopped
- 1/2 bell pepper, chopped
- 1 rib celery, chopped
- 2 cloves garlic, chopped
- 1 envelope beef stew seasoning
- 3 Tbsp. flour
- 4 cups water or chicken broth
- 4 chopped green onions
- 1/4 cup chopped fresh parsley
- 2 lb. shrimp, crawfish or prebrowned chicken
- tony's seasoning
- salt and pepper
Oven Fied Chicken

Preheat oven to 400. Place egg substitute in a shallow dish
- 1 cup egg substitute
- 1 1/2 cups flour
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp salt
- 1/2 tsp dried thyme
- 1/4 tsp white pepper
- 3 skinned chicken breast halves
- 3 skinned chicken thighs
- cooking spray
- 1 Tbsp butter melted
Asparagus and Warm Bacon Dressing

In large skillet, cook bacon over medium heat for 10 minutes or un til crisp, turning once
- 3 slices bacon
- 3 Tbsp sliced shallots
- 2 Tbsp white wine vinegar
- 1 tsp Dijon mustard
- 1/2 tsp grated lemon zest
- 1/2 lb fresh asparagus, trimmed
Braised Pork Shoulder

Heat oven to 325. Mix all ingredients together, except Chimay and rub all over pork shoulder
- 1 4-5lbpork shoulder-bone in
- 2 Tbsp chopped garlic
- 3 Tbsp diced jalapenos
- 2tsp mustard seeds ground
- 2 Tbsp kosher salt
- 2Tbsp black pepper
- 3 Tbsp olive oil
- 2 tsp dried thyme
- 1 large bottle of Chimay beer
Chicken Enchiladas (Chuck's)

Bake or broil chicken until tender
- 4-5 lb chicken
- 20 soft tortillas
- 3 pt sour cream
- butter
- 2 large onions, chopped
- salt to taste
- 2 pkg frozen chopped spinach, cooked and drained reserving 1 cup spinach water
- 4 (4oz) cans chopped green chilies
- 1/2 cup milk
- 10 oz Monterey Jack cheese, grated
Key Lime Pie

Preheat oven to 325. In a large bowl, cream the cream cheese and sugar
- 8 oz cream cheese
- 1 1/4 cups sugar
- 1/4 cup key lime juice with zest
- 1/4 cup sour cream
- 1 Tbsp. flour
- 2 drops green food coloring
- 2 eggs
- 1 9 inch pie crust, baked
Spinach Orange Salad

Toss salad ingredients together with enough dressing to coat
- Dressing:
- 3/4 cup safflower oil
- 1/4 cup honey
- 1/4 cup sesame seeds, toasted
- 2 tsp black pepper
- 1/4 cup red wine vinegar
- 1/4 cup dijon mustard
- 2 cloves garlic, minced
- 2 tsp salt
- Salad:
- 10 oz fresh spinach
- 1 small red onion, thinly sliced
- 8 oz fresh mushrooms, sliced
- 1 (11oz) can mandarin oranges, drained
- 8 oz bacon, cooked and crumbled
Coconut Cream Pie

- 1/2 cup sugar
- 1/4 cup cornstarch
- 2 cups whole milk
- 4 egg yolks
- 1 whole egg
- 3 Tbsp. unsalted butter
- 1 cup toasted coconut, plus more for garnish
- 1 tsp. vanilla extract
- 1 9 inch pie crust, baked
