If you're using bay scallops, keep them whole, If you're using sea scallops, cut each in half horizontally
- 3 Lb fresh scallops
- S&P to taste
- AP Flour for dredging
- 12 T butter
- 1.5 C chopped shallots
- 3 cloves garlic choppe
- 3/4 C chopped flat leaf parsely
- 1 C dry white wine
- 3 lemons halved
Marinara Sauce

- 2 large cans diced or crushed tomatoes
- EVOO
- 3 T minced Garlic
- Salt
- 3 T dried parsely
- 1 T dried oregano
- 1 bottle pinot noir
Company Brunch

Arrange the English muffins in a buttered 9X13 baking dish
- 5 sour dough English muffins split
- 1 C shredded cheddar
- 1 C shredded Swiss
- 1 lb cooked breakfast sausage drained and crumbled
- 12 eggs lightly beaten
- 2 C milk
- 1/3 c chopped fresh parsley
- 1/3 C chopped green onions with tops
- 1 C sliced mushrooms
Strawberry Freezer Jam

- 1 lemon, juiced
- 1 clove garlic, minced
- Kosher salt and freshly ground black pepper
- Salad:
- 12 ounces orzo pasta
- One 15-ounce can chickpeas, drained.
- 1 1/2 cups red grape or cherry tomatoes
- 1 1/2 cups yellow grape or cherry tomatoes
- 1 1/2 cups kalamata olives, halved
- 1 1/2 cups crumbled feta cheese, plus more for topping
- 3 tablespoons minced fresh parsley, plus more for topping
- 1 red onion, diced

Creamy Cilantro Lime Dressing

Puree all ingredients in a blender or food processor until smooth, adjust seasonings as needed
- 1 C loosely packed cilantro leaves roughly chopped
- 1/2 C plain greek yogurt
- 2 T fresh lime juice
- 1 garlic clove
- 1/4 C EVOO
- 1 1/2 t white vinegar
- 1/8 t salt

- 3 tablespoons butter, melted
- 1/3 cup maple syrup
- 1 tablespoon Worcestershire sauce
- 2/3 cup chicken stock
- 3 tablespoons lemon juice
- 1 tablespoon garlic powder
- 2 teaspoons onion powder
- 1/2 teaspoon salt
- 1 teaspoon finely ground black pepper
- 1 teaspoon Tabasco sauce, to taste (optional)

- 2 -3 large cucumbers
- 1 medium white onion
- 1 ⁄2 cup sugar
- 1 cup white vinegar
- 2 cups water
- 1 tablespoon pepper
