Bring a large pot of salted water to a boil over high heat
- 1 pound penne pasta
- 1/4 cup olive oil
- 1 pound medium shrimp, peeled, and deveined
- 4 cloves garlic, minced
- 1/2 teaspoon kosher salt, plus extra for seasoning
- 1/2 teaspoon freshly ground black pepper, plus extra for seasoning
- 1 (15-ounce) can whole tomatoes, drained, roughly chopped
- 1/2 cup chopped fresh basil leaves
- 1/2 cup chopped fresh flat-leaf parsley
- 1/4 teaspoon crushed red pepper flakes
- 1 cup white wine
- 1/3 cup clam juice
- 3/4 cup heavy whipping cream
- 1/2 cup grated Parmesan

- 1/4 teaspoon dried oregano
- Pinch crushed red pepper

- One 14.5-ounce can stewed tomatoes

- Sausage Pizza:
- 1 tablespoon extra-virgin olive oil
- 12 ounces sweet Italian sausage, casings removed
- 12 ounces hot Italian sausage, casings removed
- 2 cups freshly shredded low-moisture mozzarella (about 8 ounces)
- 1 cup freshly shredded soft Asiago cheese (about 4 ounces)
- All-purpose flour, for dusting

Bring a large pot of water to a boil, add pasta and cook according to the directions on the package
- 8 ounces whole-wheat thin spaghetti, vermicelli or angel hair
- 1 tablespoon extra-virgin olive oil
- 2 cloves garlic, minced
- 1/3 cup chopped flat-leaf parsley
- 1/4 cup pitted chopped Spanish or Greek olives
- 2 tablespoons capers
- 1 teaspoon anchovy paste
- 1 tablespoon fresh oregano leaves or 1 teaspoon dried
- 1/8 teaspoon crushed red pepper flakes
- 1 (14-ounce) can diced tomatoes, preferably "no salt added"
- 3/4 cup chopped fresh arugula
- 1/4 cup grated Parmesan

- 1 onion finely chopped
- 3 T butter
- 1 T flour
- 2 C Beef Stock
- 2 T Tomato paste
- 3 T sour cream

Kale Salad with Balsamic, Pine Nuts, and Parmesan

Heat a small skilled on medium high heat
- 1/4 cup dried sweetened cranberries, chopped (or whole golden raisins or currants)
- 1/3 cup pine nuts (can substitute slivered almonds)
- 1 pound fresh Lacinato kale (also called Tuscan kale or dinosaur kale), about 2-3 bunches, rinsed and patted dry
- 1/4 cup balsamic vinegar
- 3 Tbsp olive oil
- 1 Tbsp seasoned rice vinegar
- 1 Tbsp honey
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 cup grated Parmesan cheese, packed

- 1/4 C shredded unsweetened coconut
- 3/4 C panko
- 2 T flour
- 1 large egg
- Dash of salt
- EVOO
- Dipping Sauce
- 1/2 C orange marmalade
- 4 t rice wine vinegar
- 1/2 t crushed red pepper flakes
