- Sauce:
- 4 boneless, skinless chicken breasts, 6 ounces
- Large plastic food storage bags or waxed paper
- 1 package, 10 ounces, frozen chopped spinach
- 2 tablespoons butter
- 12 small mushroom caps, crimini or button
- 2 cloves garlic, cracked
- 1 small shallot, quartered
- Salt and freshly ground black pepper
- 1 cup part skim ricotta cheese
- 1/2 cup grated Parmigiano or Romano, a couple of handfuls
- 1/2 teaspoon fresh grated or ground nutmeg

- 1/2 cup white wine

Mexican Meatball Soup

In a large pot, heat the oil over moderately low heat
- 1 tablespoon cooking oil
- 1 small red onion, chopped
- 2 jalapeño peppers, seeds and ribs removed, chopped
- 1 zucchini (about 1/2 pound), cut into 1/2-inch dice
- 2 1/4 teaspoons dried oregano, or 2 tablespoons chopped fresh oregano
- 1/2 teaspoon ground cumin
- 1 quart canned low-sodium chicken broth or homemade stock
- 2 cups water
- 1 1/2 cups drained canned diced tomatoes (one 15-ounce can)
- 1 3/4 teaspoons salt
- 3/4 teaspoon fresh-ground black pepper
- 1/2 pound ground beef
- 2 cloves garlic, minced
- 2 1/2 tablespoons dry bread crumbs
- 1 egg, beaten to mix
- 1 cup fresh (cut from about 2 ears) or frozen corn kernels
- 1 tablespoon lime juice

- 1 T vegetable oil
- 2 t fresh ginger finely minced
- 2 cloves garlic finely minced
- 2 red jalapeños minced
- 2 t cumin seeds
- 1/4 t ground turmeric
- 1/4 t ground cardamon
- 1/4 t ground cloves
- 1/4 t ground cinnamon
- 1/2 t extra hot indian chili powder
- 1/4 t salt
- 4-5 mangos, peeled and diced
- 2 C white granulated sugar
- 1 C white vinegar
