Pumpkin Pie Creme Brulee

Preheat the oven to 300 degrees F
- Butter Cracker and Pecan Crust:

- 3 1/2 cups heavy cream, divided
- 1 teaspoon ground cinnamon
- 1 teaspoon freshly grated nutmeg
- 1/2 teaspoon powdered ginger
- 1 vanilla bean, seeds scraped and pod reserved
- 8 egg yolks
- 1 cup sugar
- 1/2 cup whole milk
- 2 cups canned pumpkin puree
- Hot water
- 1/4 cup turbinado sugar
- 32 butter crackers (recommended: Ritz crackers)
- 1/2 cup pecans
- 5 tablespoons unsalted butter melted, plus more if needed
- 2 to 3 tablespoons dark brown sugar

- up to 4 1/4 cups all-purpose flour, divided
- 1/3 cup granulated sugar
- 2 1/4 teaspoons instant dry yeast (one 1/4-ounce packet, I use Red Star Platinum)

- 6 tablespoons unsalted butter, melted (3/4 of one stick)
- 3 large eggs, lightly whisked
- 3/4 cup buttermilk
- Filling
- 1/2 cup unsalted butter (1 stick), very soft – let it sit out while dough rises
- 1 to 1 1/4 cups light brown sugar, packed
- 3 about 3 teaspoons cinnamon (I used almost 5 teaspoons)
- Cream Cheese Frosting – batch may be halved
- 1/2 cup unsalted butter, softened
- 6 ounces cream cheese, softened
- 1 tablespoon vanilla extract
- 1 pound confectioners’ sugar (4 cups)

- 1 to 1 1/2 pounds assorted mushrooms, sliced
- 1 clove garlic, minced
- 1 cup vegetable broth
- 2 to 2 1/2 pounds boneless, skinless chicken breasts, cubed
- Two 15-ounce cans golden mushroom soup
- 16 ounces chive and onion cream cheese
- Two 0.7-ounce packages dry Italian dressing
- Freshly ground black pepper
- 1 pound of your favorite pasta
- Freshly grated Parmesan, for garnish

Special equipment: Parchment paper Preheat oven to 400 degrees F
- 1 bulb fennel, cored and thinly sliced
- 1 large onion, thinly sliced
- 4 large cloves garlic, chopped
- 1/2 cup pitted and chopped good quality black and green olives
- 2 pounds cod fillets, cut into 4 portions (get thick pieces from the center cuts rather than tail-end pieces)
- Salt and pepper
- 1/4 cup flat-leaf parsley, a generous handful, chopped
- Extra-virgin olive oil, for generous drizzling
- 1 lemon
- Crusty bread, to pass at table
