Roughly chop the cucumbers, bell peppers, tomatoes, and red onions into 1-inch cubes
- 1 hothouse cucumber, halved and seeded, but not peeled
- 2 red bell peppers, cored and seeded
- 4 plum tomatoes
- 1 red onion
- 3 garlic cloves, minced
- 23 ounces tomato juice (3 cups)
- 1/4 cup white wine vinegar
- 1/4 cup good olive oil
- 1/2 tablespoon kosher salt
- 1 teaspoons freshly ground black pepper
HOT & CHEESY BRUSCHETTA DIP

Preheat oven to 425°F (220°C)
- 8 oz (250 g) part-skim mozzarella cheese
- 8 oz (250 g) reduced-fat cream cheese (Neufchâtel), softened
- 1/4 cup (50 mL) light mayonnaise
- 1 1/2 tbsp (22 mL) Herbs de Provence Seasoning Mix
- 3 garlic cloves
- 1/4 tsp (1 mL) ground black pepper
- 1 pint grape tomatoes
- 1 egg, beaten
- 1 frozen puff pastry sheet (from 17.3-oz/397-g pkg), thawed (see Cook’s Tip)
- Toasted Baguette Slices (see Cook’s Tip), assorted vegetables or crackers

- 1 tablespoon Worcestershire sauce
- 2/3 cup chicken stock

- 2 teaspoons onion powder

Fruit and Gorgonzola Salad with Prosciutto

Cut or tear the prosciutto into bite-size pieces
- 3 ounces thinly sliced prosciutto
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons sherry vinegar
- 1 teaspoon dijon mustard
- Kosher salt and freshly ground pepper
- 2 peaches, pitted and sliced 1/2-inch thick
- 2 plums, pitted and sliced 1/2-inch thick
- 1/4 cup thinly sliced red onion
- 8 cups torn mixed salad greens
- 2 to 3 ounces crumbled gorgonzola (or other blue cheese)

Sunny's Easy BLT Hot Dog

- 6 strips bacon
- 1 teaspoon BBQ or steak seasoning
- 1/2 teaspoon sugar
- 4 beef hot dogs with natural casing

Preheat oven to 350º and position an oven rack in the middle of the oven
- FOR THE CAKE
- 3 8-oz. blocks cream cheese, softened
- 1 15-oz. can pumpkin purée
- 4 large eggs
- 3/4 c. sugar
- 1/2 c. light brown sugar
- 1/4 c. sour cream
- 2 tsp. pure vanilla extract
- 2 tbsp. all-purpose flour
