- 3 tablespoons extra-virgin olive oil
- 3 tablespoons unsalted butter
- 3 medium onions, sliced thin (about 4 cups)
- Salt
- 4 (1/2-inch-thick) slices calf's liver, (about 1 pound)
- Ground black pepper
- 2 tablespoons lemon juice
- 2 tablespoons minced fresh parsley leaves
Vegetable Soup

This soup is completely delicious and it’s easy to make
- 2 1/2 Tbsp olive oil
- 1 1/2 cups chopped yellow onion (1 medium)
- 2 cups peeled and chopped carrots (about 4)
- 1 1/4 cups chopped celery (about 3)
- 4 cloves garlic, minced
- 4 (14.5 oz) cans low-sodium chicken broth or vegetable broth
- 2 (14.5 oz) cans diced tomatoes (undrained)
- 3 cups peeled and 1/2-inch thick diced potatoes (from about 3 medium)
- 1/3 cup chopped fresh parsley
- 2 bay leaves
- 1/2 tsp dried thyme
- Salt and freshly ground black pepper
- 1 1/2 cups chopped frozen or fresh green beans
- 1 1/4 cups frozen or fresh corn
- 1 cup frozen or fresh peas
Southwestern Turkey Chili and Cornbread

Cornbread: 1. Preheat oven to 400° F
- Cornbread:
- vegetable cooking spray
- 1 (11-ounce can) Mexicorn
- 1 egg
- 8 1/2-ounces package corn muffin mix

Roast Leg of Lamb with Wine Gravy

Combine wine, garlic, salt and morels or mushrooms in a covered roasting pan
- 1 leg of lamb, bone-in
- 1 cup plum & apple wine (or substitute cream sherry or a sweet rosé)
- 2 heads peeled, crushed garlic
- 1 teaspoon salt
- 1/2 cup dried morels (or use 1 cup fresh portobello mushrooms, chopped into large chunks)
- 2 Tablespoons cornstarch
French Coconut Pie

- 2 eggs, beaten

- 1 (3 1/2–ounce) can shredded sweetened coconut (about 1 cup)

- DIPPING SAUCE:
- 4 boneless pork chops, 1-inch thick
- 1/4 cup soy sauce
- 1/4 cup water

- 1 teaspoon pepper
