Buttermilk Cornbread

This is my favorite recipe for cornbread (cornpone)
- 2 1/2 cups white corn meal, coarse ground (White Lilly is Best)
- 1 cup flour
- 1 tablespoon sugar
- 2 teaspoon salt
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 2 eggs, lightly beaten
- 2 cups buttermilk
- 2 tablespoons oil (melted butter can be substituted for the oil)
- 1 tablespoons bacon drippings
London Broil

The things you want to remember with this recipe are "rare," "across the grain" and "very thin slices
- 1 tablespoon butter
- 2 medium onions, thinly sliced
- 1/4 teaspoon salt
- 2 tablespoons salad oil
- 1 teaspoon lemon juice
- 2 cloves garlic, crushed
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 pounds flank steak, scored
Ground Turkey and Tomatoes With Macaroni Soup

1. I have been eating this dish along with macaroni and tomatoes all my life
- MACARONI AND TOMATOES:
- 3 cups uncooked elbow macaroni
- 6 cups water
- 1 tablespoon salt
- 1 (28 oz.) can whole tomatoes, undrained (I like Italian tomatoes)
- 3 cups tomato juice (I like Kroger Tomato Juice)
- 2 tsp. bacon drippings
- 2 Tbs. butter
- 2 tsp. sugar
- black pepper to taste (I like black pepper, I add 1 tsp.)
- TURKEY, ONION & GARLIC:
- 1 lb lean ground turkey
- 1 tsp Worcestershire
- 2 Tbsp olive oil
- 1 1/4 cups chopped yellow onion (1 small)
- 2 cloves garlic, minced
- SPICES:
- Salt and freshly ground black pepper
- 1 Tbsp Worcestershire sauce
- 1 Tbsp chopped fresh marjoram (or 1 tsp dried)
- 2 tsp chopped fresh thyme (or 3/4 tsp dried)
- Fresh chopped parsley and finely grated Parmesan cheese, for serving
Irish Stew

Traditionally, lamb shoulder chops or leftover bits of beef are used to make this peppery stew
- 2 pounds potatoes, peeled and sliced ¼-inch thick or just toss them in
- 3 cups onions, peeled, cut in half and thinly sliced
- 2 cups carrots, peeled and cut into 1-inch lengths
- 12 sprigs fresh thyme
- salt, to taste
- freshly ground black pepper, to taste
- 2 pounds boneless blade steaks, 6 lamb shoulder chops can be substituted
- 12 ounces beef broth
- 3 tablespoons flour
- freshly chopped parsley
Slow cooker / Crockpot Chicken Lo Mein Noodles

This versatile Asian noodle dish is flavorful and saucy with baby bok choy, carrots and chicken breasts
- 2 pieces of uncooked chicken breast (1 lb) (you can choose to leave them whole or cube them and brown in a pan first)
- 1 400 grams/14 ounces package of fresh Lo Mein noodles or cook 4 ounces of dry egg or pasta noodles of your choice (lo mein, chow mein, spaghetti, vermicelli, etc.)
- 2 cups or 1 bunch of baby bok choy, washed and sliced
- 1 medium carrot, peeled and chopped or shredded into matchsticks
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, minced
- salt and pepper to taste
- 2 teaspoons of low sodium soy sauce or tamari
- 1/4 teaspoon of sesame oil
- 1/2 teaspoon of potato or corn starch
- optional dash of black pepper or 1/4 teaspoon of chili garlic paste (sambal oelek)
- 1/2 cup low sodium chicken broth
- 1.5 - 2 Tablespoons oyster flavored sauce or vegetarian flavored oyster sauce
- 2 Tablespoon low sodium light soy sauce or Tamari
- 2 teaspoons of honey or sugar
- 1 teaspoon of dark soy sauce
- 1 teaspoon of sesame oil
- 1/2 Tablespoon of Mirin or Chinese Cooking Wine (Shaoxing wine)
- 1-2 teaspoons of chili garlic paste (sambal oelek), red pepper chili flakes or Sriracha sauce - optional for a spicy kick
- 2 - 3 tablespoons of potato or cornstarch (depending on how thick you want the sauce)
- 1/4 cup of cool water

Slow Cooker Pork Ranch Chili

Thick or brothy? This recipe makes a thick chili
- FOR VEGGIE BOOST:
- 3 pounds boneless pork roast, lean
- 2 cups chopped onions
- 2 tablespoon olive oil
- 1/2 cup low-sodium taco seasoning, 2 store packets
- 2 ( 4-ounces) cans diced green chiles
- 2 (14.5-ounces) cans fire roasted diced tomatoes
- 1 ( 6-ounces) can tomato paste
- 2 (15-ounces) cans pinto beans, rinsed & drained
- 3/4 to 1 teaspoon salt or more to taste
- optional; may substitute other vegetables
- 2 cups roughly chopped mushrooms
- 1 red bell pepper, chopped
- 2 cups fresh baby spinach
- 1/4 cup taco seasoning (in addition to that above)
Mashed Potato Pancakes

I love mashed potatoes and mashed potato pancakes
- 1 cup dry breadcrumbs (Panko is best)
- 1 tablespoon parsley, minced
- 1 teaspoon chives, finely snipped
- 2 cups mashed potato, unseasoned leftover
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 egg, beaten
- corn oil, for frying
Ground Beef and Cabbage Casserole

A simple casserole to put together
- 1 lb ground beef (or seasoned ground pork sausage)
- 1 medium onion, diced
- 2 garlic cloves, minced
- salt & pepper, season according to taste
- 1/2 teaspoon crushed red pepper flakes (for less heat, try 1/4 tsp.)
- 2 (8 ounce) cans tomato sauce (or 16-oz. traditional-style spaghetti sauce)
- 4 cups shredded cabbage
- 2 1/2 tablespoons kraft grated parmesan cheese

- 5 medium red potatoes, peeled and cut into ½-inch chunks
- 2 1/2 cups sliced fresh mushrooms
- 4 medium carrots, sliced
- 2 celery ribs, thinly sliced
- 3 bacon strips, diced
- 1/4 cup all-purpose flour
- 1/4 teaspoon pepper, divided
- 1/2 teaspoon salt, divided
- 2 pounds beef stew meat, cut into ¾-inch cubes
- 1 large onion, chopped
- 2 garlic cloves, minced
- 1 tablespoon vegetable oil
- 1 can (14½ ounces) beef broth
- 1/2 cup dry red wine or additional beef broth
- 1 bay leaf
- 1/8 teaspoon dried thyme
- 1 can (10¾ ounces) condensed tomato soup, undiluted
- 1/3 cup water
- 2 tablespoons cornstarch
- 3 tablespoons cold water
