- 1 1/2 pounds boneless pork center rib, trimmed and cut into ½" cubes
- 2 tablespoons olive oil
- 1 medium chopped onion
- 1 can yellow hominy (15½ oz.) drained
- 1 can diced tomatoes (14 ½ oz.) undrained
- 1 can chopped green chilies (4 oz.)
- 1/2 cup water
- 1/2 teaspoon chili powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon ground cumin
- 1/4 teaspoon salt

- 1/2 cup all purpose flour
- dash of nutmeg
- dash of cinnamon
- dash of ground cloves
- salt and pepper to taste

- 1 cup cooking sherry

Mix well all ingredients, except for the frying oil
- 1 cup self-rising flour
- 1 cup self-rising cornmeal, or from a mix (recommended: Aunt Jemima's)
- 2 eggs
- 1 tablespoon sugar
- 3/4 cup buttermilk
- 1/3 cup plus 1 tablespoon water
- 1/4 cup vegetable oil or bacon grease
- Oil, butter, or clarified margarine, for frying
Stir-Fried Chicken Breast

Use only organic or all-natural products and ingredients
- 1/4 pound snow peas, trimmed
- 1 tablespoons peanut oil
- 1/2 pound boneless skinless organic chicken breasts, cut crosswise into ½-inch-thick strips
- Kosher salt and freshly ground black pepper to taste
- 1/2 teaspoon sugar
- 1 cloves garlic, minced
- 1 strips orange zest, each about 3 inches long
- 1 small onion, halved and thinly sliced
- 1/2 large organic red bell pepper, quartered, stemmed, seeded, and cut crosswise into thin strips
- 3 z can sliced water chestnuts, drained
- 1/2 teaspoon grated fresh ginger
- 1 tablespoons bottled teriyaki or hoisin sauce
- 1/8 teaspoon red chile flakes (optional)

Here’s a super hearty soup filled with sausage, cheese filled tortellini, and a ton of veggies
- 1 pound Italian sausage (I usually use Jimmy Dean so I don't have to deal with removing the casing)
- 1 cup chopped onion
- 1 teaspoon minced garlic
- 5 cups beef broth
- 1/2 cup water
- 1/2 cup red cooking wine
- 2 (14.5 ounce) cans Italian diced tomatoes
- 1 cup thinly sliced or diced carrots
- 1/2 tablespoon packed fresh basil leaves
- 1/2 teaspoon dried oregano
- 1 (8 ounce) can tomato sauce
- 1 1/2 cups green beans or sliced zucchini
- 8 ounces fresh tortellini pasta (can be found by the cheese...I used Buitoni)
- 3 tablespoons chopped fresh parsley
Chinese Chili

This version of chili is more Shanghai than Southwest
- 2 pounds lean brisket
- 1/4 cup soy sauce, more to taste
- 1/4 cup hoisin sauce
- 2 large onions, finely chopped
- 1 large green bell pepper, seeded and finely chopped
- 2 jalapeños, seeded and slivered
- 1 habanero or other hot fresh chile, seeded and slivered
- 4 cloves garlic, minced
- 1 2-inch piece fresh ginger, peeled and minced
- 1 tablespoon Sichuan peppercorns, crushed in a mortar
- 1 tablespoon five-spice powder
- 12 ounces beer, preferably amber ale
- 1 14-ounce can whole San Marzano tomatoes, crushed
- 1 tablespoon rice vinegar
- Chinese hot chile oil
- 2 tablespoons finely chopped cilantro

- 1 pound pork sausage, sage-flavored
- 2 tablespoons red or white onion, finely chopped
- Gravy:
- 6 tablespoons sausage dripping or butter
- 6 tablespoons all-purpose flour
- 1 quart milk
- 1/2 teaspoon poultry seasoning
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon sea salt
- 1 dash Worcestershire sauce
- 1 dash Tabasco pepper sauce

- 1 cup boiling water
- 1/2 cup shortening
- 1 package active dry yeast

- 3 cups flour
