Simple Chicken Curry チキンカレー

- 1 lb boneless skinless chicken thighs (or beef, pork, seafood, tofu, or vegetables)
- Salt
- Freshly ground black pepper
- 2 carrots
- 2 onions
- 1-2 potatoes
- 1/2 Tbsp. ginger
- 2 cloves garlic
- 1 QT (4 cups/1000ml) chicken broth (or water if you use store bought curry roux)
- 1 apple (I used Fuji apple)
- 1 Tbsp. honey
- 2 tsp. salt
- Homemade Japanese curry roux or 1 box (7 oz, 200g) store bought Japanese curry roux
- 1 1/2 Tbsp. soy sauce
- 1 Tbsp. Ketchup
- Soft boiled egg
- Fukujinzuke (pickles)
Spinach Quiche

Preheat the oven to 400° F
- 1 pie crust, Deep Dish
- 10 ounces frozen spinach, well drained
- 4 large eggs
- 1 1/2 cups light cream
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup crumbled feta cheese
- 1/4 teaspoon dry mustard
- 1/4 teaspoon tarragon
Schweinshaxe

In Bavaria, they call it "Schweinshaxe" and cook it in the oven, which turns the skin into a delectable crust
- 1 large or 2 small, fresh ham hocks, 3-4 lbs. Schweinshaxe mit Kartoffelmuss
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 tsp. dried sage, chopped fine or rubbed
- 1 tsp. dried rosemary, chopped fine
- 1 T. shortening
- 1 1/2 c. chicken or beef broth
- 1 onion, peeled and cut into quarters
- 1 carrot, peeled and cut into 1 inch pieces
- 1/4 of a celeriac root, or 3 pieces of celery, peeled and cut into 1 inch pieces
- 1 parsley root, peeled and cut into 1 inch pieces (or parsnip)
- 10 whole peppercorns
- 3/4 c. sour cream
- 2 T. flour
- White wine to taste

Mix soup, celery, onion, salt, pepper and mayonnaise
- 10 ounces boned cooked chicken
- 1 cream of chicken soup, can
- 1 cup diced celery
- 2 teaspoons onion
- 1/4 cup mayonnaise
- 3 hard boiled egg, sliced
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 dash cooking sherry

Apple and Maple Bread Pudding

Cooking the bread pudding in a loaf pan gives it a modern, bakery-style look
- Custard
- 6 large eggs
- 1/2 cup pure maple syrup (preferably Grade B)
- 1/2 cup (packed) dark brown sugar
- 1 tablespoon vanilla extract
- 2 teaspoons ground cinnamon

- 6 tablespoons sugar, plus additional for coating the cups
- 7 ounces sweetened coconut flakes
- 1½ tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 1 cup canned unsweetened coconut milk
- 2 teaspoons fresh lemon juice
- 3/4 teaspoon coconut extract
- 1/2 teaspoon vanilla
- 5 large egg whites
- 1/4 teaspoon cream of tartar
- Chocolate Sauce:
- 4 1/2 ounces bittersweet chocolate, not unsweetened

- 1 bone-in or boneless rib eye steak or sirloin steak at least 1 1/2 pounds, cut to at least 1 1/2 inches thick
- Pinch of salt
- Freshly ground black pepper
- 2 teaspoons extra-virgin olive oil

- Few sprigs fresh parsley, including stems
